This knife will rust if left wet so dry them after each use. Some users apply a bit of oil to the knife after drying to keep the knife from rusting. Personally, I tend to prefer stainless but this knife will make a convert out of you. Most Americans who like Japanese-influenced knives like to acquire and collect a Gyuto (beef-knife). A gyuto is an all-purpose main knife which can handle a variety of jobs and is most similar to a French or a German Chef's knife (what most Americans are are used to).

I've been using this knife going on two years now and I can honestly say it's the best chef's knife I've ever used. It's light, comfortable to hold, and will cut pretty much anything it touches. The only downside is that it's not meant for heavier work. My mother chipped a piece off while chopping at a frozen chicken with it. That's about it.

Forschner Paring Knife

3.25' Wavy Edge Paring Knife in BlackI recently obtained one of these in very, very used condition from a relative. It had been in an outdoor shed for years, where it had been used for a lot of extreme use (cutting heavy rope, cutting plants, etc.). Even though it was filthy and looked to be badly rusted from neglect, it turned out to be in excellent shape after just a little bit of dish soap and a good scrubbing. No actual rust at all, and not even any staining on the blade. I ran it through the dishwasher, just to be sure it was disinfected, then added it to my kitchen knife collection. The first time I used it was as a steak knife. I needed one more steak knife than I had in my set of matching knives when I had people over for dinner, so I grabbed this one to use myself in order to let my wife and guests have the "good" knives. Well, this was easily the best steak knife I have ever used. It felt good in my hand, and sliced through meat like butter. It had no trouble going through tough gristle, and made nice clean, neat cuts on small and delicate pieces of meat. Whenever I go to a restaurant and have steak, I cringe when they bring out those big nasty "safety" steak knives, the ones that are like serrated spatulas so you can't accidentally (or on purpose) stab anybody. Those things are useless and make it so awkward to eat a steak I hardly ever order steak or prime rib out anymore. I wish restaurants would hand out these. They are cheap. The blades aren't long enough to turn them into menacing weapons. And, apparently, they hold up well for professional use.

I plan on buying a dozen of these and getting rid of my existing steak knives and I can't imagine a cheaper way of getting a matched set of quality steak knives.

HIGHLY recommended as a steak knife, and surely would suit you well for any number of other utility uses, including kitchen prep, camping, garden, or just having around the workshop. They are so cheap, you should get one just to use and if you don't like it, you can just toss it in a drawer and forget about it.

We bought some of these at least 10 years ago if not more, and the last of them disappeared lately. They still had an edge, just not as clean. We will enjoy these just as much as we enjoyed the last ones. Great for grapefruit, steaks, carrots, whatever you need to cut, they will cut.

These are great knives! I would've given a perfect score except I thought the handles were of a much cheaper quality of plastic than ones I have purchased in the past....but so far has shown to be just as effective.

If you're looking for an affordable knife with an amazingly sharp blade and comfortable grip, this is it ! I can slice summer sausage thinner than 1/8 of an inch thick, and slicing fruit thin for tarts or just for a different mouth feel when raw is easy ! The blade guard is also greatand having different colors makes them stick out in the drawer. I'm gradually changing all of my knives to Kuhn Rikon. I can't afford Wustoff or some of the other mega-buck knives, but with these I don't feel I need them :)

I love the grooves around the edges to keep all the juices and moisture from things I am cutting from spilling over onto the surrounding surfaces. I recently used the Catskill for making both our Thanksgiving and Christmas meals. It was great because of its large surface area, I could cut multiple items and push them into neat little piles on the edge of the cutting board and continue cutting even more. The Catskill came through some heavy duty work without any stains or deep cuts. This is now, officially my favorite cutting board in the house.

I purchased this to replace a well used board which became so warped and distorted that it made chopping and cutting difficult, I was pleased to finally get it replaced. I tossed the new one in the dishwasher (as recommended on the packaging) for an initial cleaning only to retrieve a warped board following a normal dishwashing cycle. Not too happy, and will likely have to replace it as I continue to wash it in the dishwasher. I would purchase a thicker board if you plan on washing it in the dishwasher.

I bought this to replace an existing, well used, cutting board. I wanted something with a groove for cutting meat and other things that tend to have some run off. So far it has worked really well. It catches liquid and is a nice medium size that still fits well in the dishwasher.

See that big design curve at the hilt? Well that area should still be the blade. That curve serves no purpose. On a tight budget these will do nicely, no rusting or dulling yet but I wouldn't give them as a gift or buy more from this maker.

It is single unit knife which I liked better. I had some knife that handle came off trying to cut chicken. I did not have any rust problem. They are very sharp.

These knives are the best knives I've ever used! Sharp, light weight yet not flimsy. There isn't a problem with rust so long as you don't let them set in water more than what it takes to clean them. Dry them off afterwards and then put them away. I love how cleanly the steak knives cut through beef, chicken, and pork. Only thing it needs is a butcher block to hold them. But the box they came in is good enough. :) Well worth every penny and then some!

Bought these at Sam's club. The salesman was sawing through the head of a hammer with one of the knives. I was a little skeptical of the marketing pitch ("this is $300 worth of knives for only $50!!") but, being a new bachelor out on my own, I needed kitchen knives badly and didn't feel like spending a ton of money.

I really like the handles and weight of the knives. They are comfortable to hold and use. Very sharp as mentioned in other reviews.

However, the Chef's knife, the main reason for purchasing this set, has developed a chip in the blade near the middle. Very disappointed. I've only been using them for about a month. I have ceramic knives, notorious for breaking and chipping, for years that haven't chipped.

Right now I'm debating testing this company's "lifetime warranty" or perhaps returning them and plunking down a good chunk of change on some quality knives.

I've been in the fishing industry for 14 years now and have used this knife cutting fish for 6 hours straight on many occasion. Every species of fish has different anatomy and physiology so you need a few different style knives to get the job done efficiently. This knife in particular works great for filleting small to medium vertebrae fish of up to 15 20 lbs (rock fish, bass, cod) using the slab method. 8 inches of blade helps clear your knuckles of the unpleasant dorsal spines. The narrower height makes for easily turning the blade once you reach the spine with the first cut yet theres still enough "heft" to help carry your momentum through the rib bones on the second cut. The flexibility of the thinner diameter blade helps tremendously in two areas. The flexing enables laying of the blade as flat as possible against the spine in order to maximize yield. The thinner diameter also transmits sensitivity better, helping you "feel" where you're cutting since the knife is hidden under the fillet once you start your cut at the head up until it exits at the tail. If you're buying a knife for filleting tuna or larger vertebrae fish (Dorado, Jacks) using the framing method, different style knives with stiffer blades will be better suited for the jobs. I might sound like a knife rep. or something but I'm not. I just appreciate well made tools that help me get the job done better and Forschner's designs have proven to work very well for me in several areas including this particular application I've discussed.

Tojiro DP 8-inch Chef's Gyuto KNife

Tojiro DP 8-inch Chef's Gyuto KNifeI was turned onto Tojiro by a fellow cook who had his knife bag stolen. He took a flyer on a Tojiro because it was only $60 at the time (this was 2007). I fell in love with his knife when he let me try it out. This is the best Cooks Knife you will ever own. I'm on my 6th year now of using it and it's still the most wicked blade I can think of. I wouldn't trade it for anything.

I'll update this review as time passes, but for now, I'll go over the basics.

I'm a chef, and I've used pretty much almost every brand of knife that's recommended or popular. This includes but is not limited to Shun (basic, premier, ken onion, Henckles, Messermeister, Cozzini, Togiharu, Kikuichi, Mac, Global, Wusthof, and probably a few more. I found out about Tojiro brand knives from intense research into knives following the theft of my knife kit and wanting a cheaper alternative to the Shun Premiers I was using previously.

Now, before I expand on this, let me preface the review with Chef's do not make a lot of money. In fact, we get straight nothing when it comes to being paid fairly for skilled labor. And we rarely make tips. If we spend money (that's not on alcohol or drugs) it's on our shoes and knives; the two things we use the most. I know chef's who swear by German steel, and I know chef's that swear by Japanese steel. They are very different, as German steel tends to be thicker and heavier, requiring less effort than a Japanese knife. I'm more of a fan of Japanese knives, so right away the effectiveness of your knife is going to be contingent on your style.

But holy hell this knife is sharp.

At the time I purchased it, this knife was 70 bucks with shipping, less then half for my Shun Premier I mentioned earlier. I took it out of the box and I didn't think much of it at first. It's aesthetically very run of the mill, which I was fine with, since it's my primary tool for my profession. I went about opening a little plastic bag with my new fish bone tweezers in it with this knife and as I was talking to my girlfriend I accidentally cut open the bag when I wasn't paying attention. I didn't notice the bag was already open until I consciously went to try and open it afterward. To my surprise, the bag was open, and it felt like the knife didn't even have to try to cut through it. I was stunned. I did not expect it to be this sharp right away.

I realize a plastic bag is not much compared to actual produce or meat, so I went to brunoise an onion and it just cut it so smoothly I wanted to weep forever. I was glad that my knives being stolen wasn't going to hinder me much longer then the three days I waited for this knife to arrive. Once it begins to dull down and I have to take it to the stone, I'll expand on how it hold up and comes back, as that will be the true test of the knife; its longevity.

Update 1:

I just steeled this knife for the first time a couple weeks ago once I noticed it wasn't cutting as effortlessly as usual. It got sharper than the original sharpening. This knife is terrifying. Like, it might be too sharp.

To our surprise, the steamer had rust stains. To further our surprise, the pan came used. The bottom had burn marks and inside the pan it had yellow stains. The very large pot had a series of scratches that appear to have been made during processing. This set is so cheap and frail, but to have it arrive used just floored us!

I make my own bagels, using high-gluten flour and the boiling method, and the exterior is definitely the "tough" crust of real bagels. Al Mar AM-C8 Chef's Knife, 8.25 in., Black Pakkawood HandleI've had this knife for years and it's fantastic!

To start with, it is in the Japanese Gyuto (I appologize if spelling is off) style. That is the Japanese "chef" knife and is geared towards meat. The Al Mar's edge and spine curve slowly upward, which is not only beautiful, but puts a lot of edge on cutting board. The western style handle is very agreeable. The entire knife is light and probably has the best balance of any large kitchen knife I own.

The steel is clad. I forget the Japanese term for it, but it's basically hard steel encased in softer stainless steel. That center steel is certainly hard. I had a tough time sharpening it the first year until the final edge was as low and even as I like it. I have had some issues with rust and don't exactly know why. Maybe it was left to air dry. Those few instances aside, it now is clean and beautiful.

I would steer serious beginners to pros to the Al Mar. It takes a little bit of care, as does any kitchen knife, but it pays out in dividends. It takes down meat and vegetables with ease.

This length is great for the home chef since a larger blade requires additional cutting board and counter-top space.

Yamazaki Aquatique ICE 5 Piece Placesetting

Yamazaki Aquatique ICE 5 Piece PlacesettingI have had my set of Yamazaki Aquatique Ice for 6 years now. I loved it when I bought it and I still love it 6 years later. It has held up very well and I would highly recommend it if you can afford it.

Yamazaki is one of the best flatware manufacturers around and these are expensive but worth it. Aquatique Ice is a top of the line, still made in Japan pattern others that come to mind are Hafnia and Old Denmark. I have a 25 year-old set of shiny Yamazaki in a discontinued pattern that has held up beautifully and aged to a nice patina. When ready for a change, Yamazaki was my first choice so when these went on sale I jumped. The handles are a gorgeous silver matte finish that doesn't show well in the photos (the close-up of the knife handle gives you the idea), while the knife blade, bowls, and tines are a shiny mirror finish. My old Yamazaki pieces are slightly shorter and balance closer to the business end (that is, I can balance a fork or spoon on one finger about 1/2-3/4 inch from the bowl) while these balance a bit closer to the midpoint. The pieces are comfortable in the hand and not over-sized or overly "modern" looking, and all the edges are smooth. I love them. Note: these are 18/8 stainless, not 18/10, but don't believe the hype. There is no material difference between the two. Avoid 18/0. You won't go wrong with this pattern.

I've been wanting to upgrade my flatware for some time now and after much searching decided upon Yamazaki Aquatique Ice. The sets were pretty expensive but by buying a place setting at a time it was cheaper! Go figure? Anyway, the flatware is beautiful, the pieces are long and elegant but quite strong. Nothing is more frustrating than bending a spoon or a fork while in use. This flatware is 18/8 stainless steel and while strong, it is not overly heavy. The handles are brushed, non-polished metal and the used ends, like the bowl of the spoon or the tines of the fork are high polished metal. They are gorgeous, I love the look and feel. I will start adding to my meager set of 4 place settings now that I know I like it. Obvious high quality in both appearance and design.

Lamson & Goodnow Walnut Grapefruit KnifeI own it and use it. High quality made-in-the-USA product. Blade edges are serrated with a sharpened tip. Works great for both sectioning and removing the rind. Curvature perfectly follows the shape of the rind.

To my surprise, this grapefruit knife has extreme pluses and minuses!

Pro: the blade is curved in a useful fashion and it is very sharp -though the longevity of its sharpness cannot be determined yet as i'm a new owner.

Con: i cannot believe that of the 3 pieces that i have, 2 of them have loose blades (i.e. where they are attached to the handle's rivets, the blade rocks a bit and is not securely riveted down!). the one that has a securely riveted blade has a walnut handle that has splinters!

It's kind of unbelievable that all 3 samples have these serious quality issues, despite the blade being intelligently curved and sharp.

Well designed grapefruit knife. Most of the bend occurs towards the end of the knife, which is what I was hoping for. High quality. I have used it for 6 months now and it still appears brand new.

I eat a lot of grapefruit but had never owned a grapefruit knife before. I choose this one so the wooden handle would match my Chicago Cutlery set, which it does.

There's a slight learning curve in getting the knife started without puncturing the rind, but I figured that out.

I don't see how a knife could be any better, sharp and good quality.

This thing really gets it done no matter how tight or long the cork is. The foil cutter seems to never get dull. The two step lever action gives you leverage on the first step to get the most stubborn corks moving while the second step gives you pull length for the longest corks. The hinge is all important for getting the first step out of the way for the second to do its job. On top of all it's really compact enough to comfortably keep in your pocket throughout a meal.

These are fine for throwing in drawers around the house but I would never take these to work. The second flange sticks and doesn't move in its hinge. It feels flimsy.

I am pleased with these corkscrews and consider them a great value for the money. They really beat my old Ecko cheapie corkscrew that I've been using for ages. The double-hinged feature makes it so easy to extract the cork without the risk of it going off sideways and breaking. It lifts the cork straight up out of the bottle in a very smooth fashion.
