Mercer Cutlery Genesis 5" Forged Utility Knife, Steel/Black

This is by far the very best knife I've ever owned. I treat it like a baby now, only hand wash and never put in dish washer. Can't say enough good about it, maybe the knives I've had in the past weren't good and I thought they were.

Just what I was looking for. This is just the right size (width and length) and weight,

with a good grip handle, for all those everyday uses,

for people who do not have large jobs.

I would even cut meat with it besides cut fruit or onions for cooking;

but when parring anything, watch your fingers; I always cut my

fingers with a new knife but the really good ones are worse.

I don't know if the price was right or not;

If I really like something I keep it forever.

And it's High Carbon-No Stain German Steel. Yeah.

I have Wusthof knives. They are great but the forged line is too heavy for my wrists. I searched and read about knife brands over a period of time, looking for other reputable knives. This utility knife is wonderful. The handle is thick, round and really gives you something to grip onto. It also has a very slightly squishy, rough, non-slip texture which I like the feel of. The blade is paper-cutting sharp out of the package and has been keeping the same sharp edge with honing. Other things about the knife are that the blade is tapered and the weight is mostly in the handle but the blade is light. Less weight in the handle would be good, but I enjoy it so am willing to look beyond that.

Good balance, well made, my main concern was the NSF certification. Once I received the knife I was very satisfied with it.
