After some shopping, I went for this Waterford Brayton Bead 45-piece set because: (1) I've used the same 'bead'-pattern from various manufacturers as my everyday setting (Antique Bead, Continental Bead; the first was called "Fashionpoint") going back 30 years; (2) it's an eight-place setting of the standard five utensils (fork, salad fork, teaspoon, soup spoon, knife); (3) it includes the (again standard) five-piece hostess set of slotted spoon, serving spoon, cold meat fork, sugar spoon (sometimes called 'sugar shell'), and butter knife; (4) I've heard many people testify to Waterford's quality, and (5) I insisted on getting the type of stainless called "18/10".
Generally I am quite pleased. The bead design and the extent of the bead (which runs up the handle to the beginning of the teaspoon, for example) are just what I am used to. The utensils come to a slight peak at the bottom of each handle, but that is not an objectionable eccentricity to me. Fit-and-finish of the set is quite good, heft surprisingly well balanced, even though this kind of Waterford is made in China (and what isn't?). Soup spoons are deep enough, a nice surprise. The utensils are nice and heavy, heavier even than an 18/10 set of International I bought in the Nineties and am now going to put on reserve. The knife handles are NOT hollow! Because I've had a large-format flatware set for over 15 years, I was surprised to note in a number of prior reviews that the reviewers reacted with surprise and disfavor to other brands' "European-sized" flatware; if that bothers you, leave this one alone. But this alleged imposition is nothing all that new. To me, probably the biggest single eccentricity are the salad forks, which I've always expected to be a little diminutive. These Waterford Brayton Bead salad forks are almost as long as the long dinner forks! More like a dessert fork, really, though I doubt the difference will bother me much in the long run. The usual five serving or "hostess" utensils are good-sized and heavy.
"18/10" stainless refers to the composition of the stainless steel, in this case being 18 percent chromium (for rust-resistance) and ten percent nickel (which helps keep the implements shiny). One website I checked out said that for all intents and purposes, 18/8 is just as good, but one should definitely avoid eighteen over nothing (18/0). This can be tricky, as many manufacturers in their pattern descriptions do not always mention their stainless steel's composition, and there are undoubtedly many errors of omission hidden in sketchy advertising copy. (On the other hand, if a place setting is 18/8 or 18/10, a selling point is usually made of that.) Whatever the formula, scratches are not a big concern for me because my flatware (and silver, too) is always hand-washed. Waterford includes an instruction card with the set, much of which is common knowledge but some of which surprised me (not only should the user not mix stainless and silver in the dishwasher, that goes for aluminum too). Heed well.
We've had this set long enough to appreciate its heft and durability. In my opinion it rates five stars. Dinner is served!These are wonderful. I just bought them from Costco for $89. VERY thick and heavy duty. Able to be washed in dishwasher. Stain resistant, so you don't have to worry about rust.

Very reasonably priced for the quality of this purchase.I received this set as a wedding present. I have used them for 6 months and frequently wash them in the dishwasher. The metal remains pristine: shiny and virtually scratch free! The bead design shows fine craftsmanship. I've only owned off-brand silverwear in the past, so this is definitely an upgrade!

I do recommend using a wood conditioner on the handle periodically to keep it in good shape but other than that, care is easy: just keep it clean and don't subject any part of the handle to water for extended periods (I hand-wash mine). If you treasure good tools and want a scraper that's nice enough to think of in terms of passing on to someone dear, look no further.Works wonderfully in cast iron, so much better than wood or plastic.
The edge can also be used to cut things up in the pan or on a griddle, watch next time you are near a short order chef cooking up gyros, philly steaks, or similar, I bet they use something like this to chop and maneuver the food on the griddle.
Keep it nice by only handwashing, don't let it soak either. Occasionaly touch the wood up with some food safe oil, like olive or mineral oil.
The sharp corners can be a liability, be careful not to gouge or stab.

I received the product in good order and I found it to be a very well made and a worthy piece of equipment for professional use. I have owned this cutter for years and it is the only one to purchase. The rounded handles of other cutters look ergonomic, but don't have the wonderful feel of scraping or cutting dough as this one. Think about it. Round handles lose the pressure of your hand as you maneuver this tool to do its work. The handle is made of cherry wood and attached with brass rivets. It is simply a work of art. I purchased the Dexter Russell dough scraper since it is made in the USA. I was concerned due to the negative review about the product quality.The scraper I received has a nicely made smooth wood handle with the blade inserted without exposure on the ends of the handle. The wood is not walnut and appears to be the rosewood. However, this does not detract from the product quality as both woods are good.
There are some surface scratches on the blade, but this does not detract from the utility of this scraper.
I tried out the scraper with a batch of dough I was making into ciabatta bread and the blade cut my dough beautifully. I used a plastic scraper to clean up my countertop as the Dexter scraper probably would scratch.
The logo on the scraper I received is different from the one depicted. However, the same model number is present with USA and the stylized name Dexter.

Works well. It's sharp, well balanced on the center for easy handling, beautiful, and cleans easy. The only problem is that the wood handle MUST be clean and dry when you put this knife away. Well, same goes for the blade too I guess, but you need to be more careful with the handle. Sorry, no feedback on long-term durability.I purchased this glove around the beginning of the year and have used it less than a dozen times and it has already developed a small hole. I use this glove almost exclusively for mincing items on a microplane so the glove does make a lot of contact with sharp objects. I purchased a size medium and found the glove to be pretty long in the fingers. For size comparison; I wear a medium large golf glove (when golfing not cooking) which fits perfectly. It's also important to know that this type of glove will not protect you from pointed objects such as the tip of a knife. For the price it's a very good deal for most people. If you want a truly blade proof glove I think you'll have to spend about $70 and get a chain mail glove.

Shun Premier Chef's Knife
This knife is a bad ass. You know that guy that seems cool, but has that weird look in his eye and you're fairly sure he could end you if he really wanted to? Yeah, that's this knife. Compared to the knives that are provided by the vast majority of restaurants, well its like putting Butter Bean versus Jon "Bones" Jones. I've put this knife through its paces and here are my observations. Take it as you will.
Pros:
(1)Beautiful. I get alot of "Ooohs" and "Aaahs" from people who haven't seen it before. "Oh my God" is a common phrase by people who hold it, and "Holy s*** I want one" is common by those who take a couple swipes with it.
(2)Sharp. Out of the box you can cut ripe tomatoes, apples, onions, etc extremely thin very, very easily. Thin enough that light passes through it. Can you shave arm hair with it? No. You cannot. You'll need to sharpen it yourself or have it sharpened professionally for that. Nevertheless its night and day what this knife can do when compared to your average professional kitchen knife.
(3)Comfortable. I've tried quite a few different lines from quite a few different knife companies and this knife ranks right up there in the top for me. I'm 6'2" 255 lbs, mediumish hands and I have plenty of room on this handle. Fits very well to my hand and is easy to maneuver. I didn't think I would like this rounded handle as much as I do the "D" shape of the Shun Classics, but I find I prefer the Premier weight/handle.
(4)Weight. I've used German-style knives pretty much my entire career and I was fairly certain I would hate this knife simply because it doesn't have the heft that a German brings to the table. I was wrong. I hate to admit it, but I was. The blade is so thin and so sharp that heft becomes nothing more than an unnecessary entity under most circumstances. Not only is the heft unnecessary in most cases, but this blade allows extremely precise cuts. On a lark, I wanted to see what it would do versus a plastic 3 1/2 oz souffle cup. It went all the way through it in a single pass without even the slightest crinkle in the cup. Quite literally hot knife through butter. Cucumbers, tomatoes, onions, mushrooms, etc are a freaking joke. Quite literally effortless.
(5)Durability. I'm putting this as a pro mostly because the steel holds an edge decently well under normal usage. Cutting vegetables, breads, deboned meats etc this knife will make you giggle with glee. It is not however designed for bones or for being a can opener. It is a precision tool. If you want something that will smash through product then you are probably looking for a higher end Henckel, Wustof or F.Dick knife. With a simple daily honing after use the blade will hold a close-to-factory edge. Sharp enough to shred paper, but not quite as sharp as when you pulled it out of the box (obviously).
Cons:
(1)Price. If you're like most cooks, buying a knife at this price point is an investment. Its beautiful and performs extremely well, but you're always nervous its going to get dropped or misused by some idiot on the line that has no qualms about using items that aren't his/hers when you're not looking. Or it magically walking off. There are some pretty respectable SETS of knives that can be had for the price of this single knife.
(2)Blade height. Honestly, most of the time the blade will simply slice through things making this con inconsequential, but there are times where it is necessary to use the heel to cut through something and in this circumstance the blade isn't tall enough to accomplish the task without you smashing your knuckles into the product. There are only really one or two items in my current menu where this happens, but it absolutely makes me cringe when it does.
(3)Debris. While the handle is beautiful and very comfortable to the hand, it tends to collect pretty much anything it comes in contact with. The blade isn't much better. The "hammered" texture doesn't seem to have as much impact as one would think.
To say that I'm not in love with this knife would be a complete lie. It is easily the best knife I have ever owned and I would recommend the knife whole-heartedly. That said, the price point that this knife can be had at will make the vast majority of professional cooks cringe simply because of the environment that it is expected to survive in. Even as I write this review I am seriously considering buying a cheaper set that hopefully performs pretty close simply because the idea of this knife getting ruined makes my fists clench. Also, don't let water or acidic products sit on the blade for extended periods of time. Its kind of a no-brainer, but when you get used to abusing house knives, seeing the discoloration on this knife can make you a sad panda even though it wipes off pretty easy if caught in time.
UPDATE January 20, 2013: I've been using this knife for almost a year now. I have since purchased several other chef knives, including a $240 gyuto made with CPM-154 steel. I still keep coming back to my Shun. It is my go to knife for 90% of the stuff I do in the kitchen. I still have not experienced any of the chipping that some reviewers were complaining about, so it makes me assume they are mistreating this knife. For me, the Premier is the perfect balance of weight, utility, and beauty at a very competitive price. The blade is rigid(no flex) and while noticeably heavier than most gyutos and lasers, it is also noticeably lighter than German-style French knives. The VG-10 is about as good a steel as you're going to find at this price point. Good edge retention, but not superb. One of the best investments I have ever made.
UPDATE March 21, 2013: I figured I should mention my absolute favorite trait about this knife, and that is the finish and the geometry of the blade create a surface with virtually no drag. The combination create a performance trait that I have yet been able to replicate with another knife. It is particularly evident when doing your horizontal cuts for dicing an onion. With the grinds on other knives (Henckel/Miyabi products especially) they seem to create alot of drag and you almost have to rip the knife through the cut. The Premier is nearly effortless and it has caught some experienced cooks by surprise who had their hand on the back of the onion instead of on top where it belongs. Caution is warranted while you get used to this knife's characteristics.I am a pro chef at a large hotel in downtown Seattle. I use my knife for at least half of my day (3 to 4 hours), 5 days a week. I own both Japanese and German knives, all the best and most well known. I purchased a Shun classic 8 inch and was blown away at the quality and overall ballance of the knife. I decided to upgrade to the Premier...Wow, wow, wow!!! This knife is the best knife I have ever owned and I cant remember someone else I worked with having anything close to mine. Its like a scalpel or an exacto knife sharp...scary even for me and I do this stuff all day, Im trained. I must admit, I have cut myself twice already, because all the blade has to do is make contact with skin and it cuts...I know, im a wimp... Should you buy this? If your serious about culinary arts this knife is no joke. Not to mention, your gonna have a piece art on your cutting board, its a beautiful and worthy example of a real pro knife...I highly recomend. This knife should be kept far away from novices. I almost forgot to mention, it comes with a kick a** blade shield. Love Shun knives!!!

I'll start by saying I love this knife and am an avid Shun user.It took 3 tries, however, to get a knife that wasn't defective hence the 4 stars! Not Amazon's fault but the first knife sent to me had two deep scratches in the steel on the bolster. Not ok for a knife of this price! The second knife had a large chip in the handle and a crack in the blade. These things are not typical of Shun, and I hope they aren't typical of this series.
The blade on this thing is as sharp as they come, as with all Shuns. The 16 degree angle is much different from the German and American knives and very sharp! It makes cutting a breeze and this will surely become my new go-to knife in the kitchen. I'm looking forward to building up the whole set of this line over time.

I bought this at Sur La Table because I wanted to hold it before I bought it. This is by far the best knife I have. It cuts like butter. I no longer have to put much force into my cutting motion which has now greatly reduced my chances of slipping and cutting myself. The handle is large, more befitting a man's grip, but I do find it comfortable. The most important thing to know about a knife is that how it fits your hand lets you know how good the knife is. I have a variety of Shun knives in my kitchen. I bought the Premier Chef's Knife for cutting, slicing and chopping vegetables. It has been superb for performing those tasks.I find that I can process meals that require lots of vegetable processing much faster since I bought this knife. I make lots of soups and salads. This knife makes such tasks a breeze due to it's sharp blade and the non-stick blade surfaces. I really recommend this beautiful knife. If you buy it, take care to wash it immediately after using. Then, place the dry knife in a quality knife rack to protect the blade edge and finish. With proper care, it should last for decades without deterioration.

After a short couple days of light use the knives already had started to feel dull, after a week the edges had multiple chips. I don't have high hopes that these knives will useful for much longer than a few months. Please understand that I have followed all care instructions (hand washing, no cutting hard foods, storing separately, etc.) and they are still not holding up.
Save your money. I could have bought one good knife, instead of this set of junk, for the same price. Oh well, live and learn. Now you don't have to make the same mistake.Super sharp! Love the color. You have to be really careful slicing things but it works really well. As far as I know, if you follow the instructions it doesn't break/chip, differences in quality with ceramic knives has to do with sharpness, not how brittle it is. What makes it even better is that my son, who is almost 10 months old, loves to use the set as a rattle when I'm not using it to feed him. He sits and shakes it while we are walking around a store or if I actually take a few minutes to eat something and the rattle entertains him. He knows there is something in the case that should come out so the studious look on his face while it makes noise is priceless. I know that Tupperware never intended to market it as a toy, but it works for my son.
I know there are some people who worry about the color they will receive when they are not given a choice. I received a yellow spoon in a green case. I received a Global knife as a gift, only to find out that my regular honing steel shouldn't be used on it. After reading other online reviews, I selected the MAC ceramic black honing rod. It's very cool, in an elegant and simple black. It works very well, and I really like the two different options for more aggressive honing and finetuning.This is a very nice honing rod I bought for honing my Mac 8" chefs knife. One minor complaint is that if using it free hand the knife blade can get hung up on the rubber tip. Thus the reason for 4 stars. I think I would prefer it without the rubber tip.
