I use this usuba bocho for chopping all manner of things, from fish, veggies, etc, and I also use to to slice and dice. It cuts effortlessly through most things and the grip is comfortable. As a bonus it arrived with a mean factory edge! I didn't even have to pre-sharpen it. Highly recommended for the price (I paid $77.99).I'm a professional chef, and just picked up this knife. When i opened the box, i noticed there was almost no edge on it. I think the back of the knife was actually sharper. I do all my own sharpening but after a few swipes on the stones, i noticed the blade is not only bent, it has a "wave" to the edge. Making it impossible to sharpen. it's a useless knife without having it reforged. if you want good japanese steel, stick with shun, i've never had any problems out of them. the only thing good going for this knife, is it's actually a very nice mix of steel with just the right about of carbon so that it isn't too hard or too soft. To bad the manufacturing of it is horrible.

The tools themselves are outstanding comfortable to hold, and (with the exception of the soup ladle) keep the business end off the countertop. The soup ladle has too much weight that the weighted handle can't keep the bowl off the counter.
If it weren't for the carousel, I'd award 5 stars. The carousel, however, is a world unto itself, and severely limits the usefulness and efficacy of this system (particularly if you buy for space-saving reasons). The problem is, the hooks aren't angled enough, so the moment you even glance at the carousel, one of the implements will fall off. And if you should accidentally knock one off, then at least two others will go as you try to remedy the situation. Don't even _think_ of actually spinning the thing...
Lesson learned as a result of ownership: for the slotted spoon, solid spoon and spaghetti straininer, turn them so they face inwards instead of outwards. That vastly improves the chances of them staying on the carousel when it's turned. Unfortunately, if you do this for the fish slice and pancake turner, they drag on the base of the carousel and cause a completely different set of problems.

before we got this set, our nylon utensils (from a reputable brand) rested in a cylinder, handle side down, which posed a little annoyance 'cuz they were very wide and grippy, causing some resistance when placing a utensil in the cylinder or taking one out. we like the modern look of this set with the multicolored handles and how the utensils each have their own hook on the storage carousel. listed below are my pros and cons:pros:
1) compact storage carousel haven't had an issue with utensils flying off the hook when turning it rapidly or with a utensil dragging along the countertop (about 1 cm clearance). utensils meant to store with head facing out as pictured.
2) 6 commonly used utensils with heat resistant nylon heads
3) "elevate" feature of each utensil, which allows the head to rest above the countertop, essentially negating a spoon rest
4) soft, comfortable handles, multicolored for a bit of flare
5) sturdy heads, which allows the use of some elbow grease while cooking "heavy" dishes
cons:
1) handles aren't heat resistant, so they'll melt if resting against the edge of the pot/pan while cooking i know they have the "elevate" feature but sometimes i don't want to take the utensil out while cooking, especially if it's only for a short period of time. the handles should still be able to withstand some high heat; i suspect they're made of rubber, not silicone
2) the nylon heads aren't stain resistant my old utensils (which these replaced) haven't stained after 8 years of use, while these stained after 1 use!
3) questionable heat resistance of nylon heads after first use, i noticed the heads' edges melted as i was able to peel off a small clump of material after i washed it (at first i thought it was baked-on food, but it was actually the nylon!)
the "elevate" feature definitely does what's it's advertised to do, which is to prevent the head from touching a dirty countertop, but it won't prevent any food or sauce from dripping onto the countertop, so don't think it will alleviate mess altogether. i think they could've been made with more durable materials, but overall, it's a very good set of utensils. sure they'll be replaced after they've lost their utility, because they will degrade over time. stored compactly and securely on the carousel, they remain close at hand near the stove.

I luv this Buddy Knife. It is great for brownies. I am sure it is great for other things, but lost it after first use. Looked high and low for this the first time, and again now. I gave 4 stars for this reason (has been too long to remember) :) Just a tip: If you put brownies in freezer for ten minutes while warm and then cut, they are great. When brownies are warm, even a plastic knife isn't perfect. I think even if you put the knife in freezer for ten minutes, it would work out the same, although (since I lost mine, or more likely one of my boys lost it) I did not get a chance to try it this way yet...but I will. When I did use it, it was to cut five pans of brownies! My knives don't move at all when I use this companies knife guards. We have had our Diamond Vee sharpener for about 15 years now, use it regularly and it still works great. I learned about sharpening knives commercial fishing. It's impossible to fillet salmon and halibut with a dull knife. I learned to use big oil bath and water stones, which give the best results of all. But for ease of use around the kitchen on knives up to 9", a V sharpener is easiest to use and gives quite satisfactory results. Of those, the DiamondVee is my favorite it's hard enough for good stainless knives, lasts at least five years with moderate use, and while it takes a little practice, it's something a rookie can master in short order. Board is awesome, make sure you get the liquid wax to condition the board otherwise it will go to heck on you within a year or so, but all butcher blocks have this issue. The guesswork has been taken out of knife sharpening with this machine. I'm only so-so with a steel and in any case, a steel can't do the three stage sharpening that the Chef's Choice does. Since it holds the knife at the perfect angle for each step, it makes it easy for the fumble-fingered (like me) to create a perfect edge every time!
I'm buying one for my daughter now, mine is in perfect condition after more than 10 years and I imagine it will be for years to come yet!
I paid over 100 dollars for this very sharpener back then, which was a LOT of money at the time. They've come down so far in price that you haven't any excuse not to get one now!I've had one of these sharpeners for several years, and I have to echo another reviewer's comments: This tool is fine for average household knives, but if you know the difference between a sharp knife and a SHARP knife, you won't want to use this on your good cutlery.
I was raised by a knife afficianado, and learned knife sharpening the old-fashioned way (with natural and diamond stones, steels and careful technique). The results with this unit don't hold a candle to a knife sharpened the "right" way. As mentioned by others here, the edge left by the Chef's Choice is pretty rough when compared to a razor-sharp edge, although it IS useful for utility knives or re-setting the edge angles on an abused knife.
I've used this tool to good results "fixing" other peoples' knives -you know the kind -the ones that have been loose in the gadget drawer for 20 years, used for everything from hacking through frozen meat to tightening screws, and have never been sharpened. That said, I'd never let my Henckels, Wustofs, ot Forschners get close to this thing.
It's a fast way to repair abused knives and get things started towards sharpness, but by no means does it produce what I'd consider a "final" edge.

I salivated over getting a Chef's Choice electric sharpener for at least 10 years and I am glad I did not take the plunge. I was at my sister's home on Saturday and tested her Chef's Choice sharpener. I can only say that I would never ever let this machine get close to my expensive kitchen knives. This machine, in my opinion, is designed for the vast majority of folks, who have not a clue what a razor-sharp knife is or how to keep it razor-sharp using just a steel. This sharpener may be okay for sharpening mediocre knives but it's a definite no-no for fine cutlery. Let me list the problems with this sharpener:1. It will ruin your expensive Henckel's or Wusthof's finish. It grinds a highly conspicuous 1/8" to 1/4" wide set of bevels measured from the knife edge, using the rough diamond wheels, leaving very rough marks behind. The results are so ugly, you'll swear at yourself for being so stupid for testing your fine knives on this machine. The diamond wheels are coarse and rough. Gone will be the once beautiful satin/mirror finish on your knife's original edge.
2. Even with the 2nd stage fine-grit hone, the resulting knife edge is still VERY rough by my standards. Again, you will have to know what a truly razor-sharp knife is in order to put this into perspective. If you are one of the vast majority of folks who do not know what is a razor sharp knife, then you'll likely be very satisfied with the result that the Chef's Choice can give you. But once you know what razor-edged sharp cutlery is, you'll never let this machine touch your knives again.
Keeping knives sharp is no magic. First you need to treat your knives well by not letting the fragile sharp edge touch hard objects such as dinner plates, tile or stone countertop, silverware, kitchen sink, dish washer rack, etc. Learn to handwash your sharp knives. Use your knives only on a cutting board. Then learn to keep your knives razor sharp by using a steel on a regular basis. If you really need help, then a diamond-embedded honing steel followed by using a regular steel is still a much better solution to restoring a very dull edge than using a Chef's Choice.
Bottomline is this is basically just a glorified bench grinder on the countertop. Your choice to purchase it or not will depend on your need and your knife collection. For dirt-cheap knives that are sold at supermarkets or on TV, the machine may be a godsend. For fine cutlery, avoid it entirely.

I also have to echo the comments of other reviewers when saying if you have inexpensive, common cutlery this sharpener will work OK. If you have Chef's Quality cutlery don't bring it near this machine. It leaves a rough edge no matter which stone you use and simply isn't meant for good quality knives. If you paid a couple of hundred dollars or more for your set of kitchen knives, get them professionally sharpened. I didn't I am still using the same knives (and have one or two new ones in my knife drawer). Follow the directions and take your time. You can, after practicing, get your knives to slice paper, and that is certainly sharp by anyone's definition.
The directions could be easier to understand. Read them several times.Then read them some more. Sharpening does take patience and time. And you didn't learn to tie your shoelaces or ride a bike the first try either! For all you whiny-hinies who complained about 1/4 inch gouges and the like, I can only shake my head and wonder if you were holding the knife backwards or upside down...
For all of you who mentioned your "expensive cutlery" and it's "fine finish", I can safely assume that you don't understand why your $249 stock pot doesn't make fine soups automatically, etc., etc.

Getting this longer 11.7" is recommended by me, having the extra length puts less stress, throughout the stoke, on the fish and with proper execution lets you get to best out of your cuts. Not to mention, everyone watching you do it will slightly open their jaw.
This is my second knife by Yoshihiro and it will certainatley not be my last. The high carbon requires more attention too prevent rust stains, but it's no more than basic cleanliness that you should account for anyways (plus a few squirts of knife oil at the end of the day). If you want a knife that you can use and feel proud to own, Yoshihiro is a great choice.
