Arcos 6-Inch 150 mm 2900 Range Chef's Knife, RedI got this knife for my young son, who likes to help in the kitchen but isn't big enough to wield our 8" chef's knife yet. I have actually had trouble teaching him to use the rocking, slicing motion with it because it's so sharp it STICKS in the polyethylene cutting board. The handle is big and a little rough-textured, so the grip is good even if your hands are wet. The blade is thin without feeling at all flimsy, and wonderfully, wickedly sharp. My son occasionally catches me using it when he's not helping me and tells me not to use HIS knife.

Global G-11 Yanagi Sashimi Knife, 10-Inch

Global G-11 Yanagi Sashimi Knife, 10-InchI bought this knife only because I had a gift card and have a discount at a certain culinary-related store for being in the industry. Needless to say, it's a rather good yanagi, but just rather good.

It's definitely overpriced at $108+ since the steel (56-58rc), while still being harder than German (52-56rc) knives, is still softer than some other stainless yanagi (60rc) at the same price. Ok, you can get carbon steel, but some of us don't want to maintain one. It's even harder to maintain one when you're a cook whose job is not just to cut fish, but a variety of things all day. Another thing I'll mark this knife down for is that it doesn't have a continuous hollow ground back like most yanagi, but you can just wet the blade with a damp cloth to keep fish from sticking.

DO NOT USE A STEEL ON THIS KNIFE OR ANY SINGLE BEVEL KNIVES. This knife should only be sharpened on a high grit waterstone (6000+) and do not sharpen it only on one side as that'll weaken the edge. Even the box says sharpening it at 70/30, but 80/20 should be fine so long as you're only cutting fish.

If I had to pay full price for this knife, I'll have to give it 3/5 stars because although it's a softer steel and doesn't have a hollow ground back, it's stainless, requires extremely low maintenance for a yanagi, and it's more sanitary than an unsealed Japanese wood handle.

I have 5 slicers: 3 double edge slicers (Mac, Shun, Henckels) and 2 single edge (this one and a cheapy Kai Wasabi). This one is by far the best knife for slicing seafood. It is well balanced and has the sharpest blade. It has good weight that along with it's edge makes slicing the densest seafood (like Conch) easy. Many reviewers have commented on the handle's tendency to be slippery. I totally disagree. Traditional Japanese knives are designed to be pulled, not pushed. The handle is designed to be anchored by wrapping the index finger around the top of the handle. This is secure even with oily hands as long as you pull through the cut. You must use the knife the way it was designed, it is not a western styled knife. Also, this knife is one of the few Yanagi that doesn't have the traditional Japanese handle. I dislike traditional Japanese handles because they tend to unbalance the knife and make it blade heavy. To me this knife is the best since it offers single edge sharpness and a full tang-like handle. And it is very affordable compared to other Japanese Yanagi's. Can't recommend it more.

I thought I would love this based on the reviews, but I must not be a kitchen expert yet. I revert back to my metal knife and have only used these twice. But again, I'm no pro in the kitchen, so I might have bought "over my head" if you know what I mean!

Wusthof 3 Stage Electric Knife SharpenerThe Wusthof sharpener is easy to use, and the directions easy to follow. The result is a very sharp knife! However, our sharpener arrived with only three rubber feet and we had to put a towel under the other corner to keep it from wobbling during use. I emailed Wusthof customer service to order the missing foot, and about 10 days later got a generic reply back that "they were sorry to hear about problems with my knife", along with a detailed attachment specifying how to package, insure, and send my knife back to them. I then called customer service to tell them it was a sharpener issue (not a knife) and was told that they don't supply parts and that my only options were to package and ship the whole sharpener assembly back to either Wusthof or to Amazon. The missing rubber foot is at most a $0.50 cent part that simply pushes into place, and I think it ridiculous that their fix to this problem is a complicated and expensive re-packaging and shipment.

This sharpener is the best made. It matches my $700 wet honing equipment with ease. Follow the instructions and you will be very satisfied.Watch out for your fingers!

I have half a dozen Shun knives in the Stainless Series which are beautiful and functional on their own with their 16 degree cutting angle.

I've been making sushi/sashimi and rolls for 15 years. Finally took a short course to improve the aesthetics of my finished product and my wife treated me to this Pro 2 Series knife to encourage me.

First of all, compared to the larger ones in the Pro 2 Series, this is affordable. It is truly a beautiful knife as far as finish and functionality.

The sharp cutting angle and one sided bevel cut really do make all the difference in the world as far as how sashimi and sushi look in the end.

I found that I did need the 8.26" version as well but had to settle for the Pro rather than the Pro 2 Series due to cost.

If you really get in to sushi/sashimi preparation, treat yourself to one of them as well as the Pro 8.26 inch to cover all of your bases (depends on how large an item you are slicing).

If you want to stare at a knife, the Pro 2 is truly a wondrous work of art.

P.S. Don't be nice and loan it to anyone. I wouldn't.

Kyocera Ceramic 4.5 Inch Utility Knife

Kyocera Revolution Series 4-1/4 Inch Utility Knife, Black BladeWhat a knife! I did not buy this particular knife from Amazon, but was an impulse buy at an asian market which had these at a competitive price.

The blade almost looks like a cheap plastic utensil, but don't let the looks deceive you. . . this knife is sharp! There was no sleeve in the packaging, and I got a nick on my finger handling the knife the very first time.

Also with the blade being so hard, you will need to be sure that the knife takes no hard shocks or flexes too much, or the ceramic may break. I would use a mat for cutting on a Granite(or Corian) countertop to avoid chipping the blade(or maybe cutting a groove in the stone!). There are places near the edge that look translucent and you can see the very fine lines along the blade from what I assume would be from the grinding process to finish the blade.

Cutting veggies and meat is very nice, but make sure you are using a hardwood board, or cutting mat, as this sucker leaves very fine grooves on supermarket cutting boards. If the knife were any heavier the cutting would do itself!

Already owning a well-rounded selection of Wusthof Classic knives, I didn't need a medium-sized slicer. Having received this knife as a gift, it was a nice introduction to Kyocera's ceramic knives. The edge quality of this knife (and I imagine the entire Kyocera line as well) is superb. If proper care is given, I can hardly imagine a better line of knives for the home cook (save for a boning and serrated bread knife). One concern I had was that the entire Revolution line has blunted (but edged..) tips, instead of pointed tips that nearly all other knives have. I needn't have worried. I used this rather large (for the task at hand) knife in place of my beloved Wusthof Classic trimming knife (#4002) to trim fat and sinew from a piece of flank steak while preparing fajitas and the rounded-yet-sharp-edged tip easily found it's way between fat,sinew, and the meat just as efficiently as my Wusthof. As Kyocera will tell you, ceramic blades are not for cutting around bone or jobs that may require twisting of the blade (such as boning), but for day-to-day slicing, they are very tough to beat. As I have 3 (going on 4 children) and perform 99% of the cooking in my household, I appreciate the time saved by not having to meticulously maintain the edge of steel knife after each use. For that reason, I have already acquired the 3" paring knife and will be purchasing the 7" chef's model in the near future.

I bought this knife for my mother as a Christmas gift. It cuts very well and has stayed as sharp as it was out of the box for almost a whole year now! Im very impressed with ceramic blades. Im pretty sure she only uses this knife and another ceramic Kyocera knife I got her. It makes cutting almost anything in the kitchen very easy. Hightly recommended!!!

Until recently, I used a fancy German stainless steel paring knife. It used to work OK but in the past few years, it refused to stay sharp. It was never sharp enough, even though I'd frequently use a sharpening steel on it. I even had it professionally sharpened, but it quickly got dull again. Because I used it often, this got frustrating (and dull knives are dangerous), so I looked for an alternative.

This Kyocera ceramic knife is amazingly sharp. It easily slices a tomato without having to poke the skin first (good thing, because the knife has a blunt tip). It even cuts through banana peels from the outside (I cut them up before composting). It lets me make thinner slices and handles well. The blade already has some minor staining (not a problem with stainless steel), and as others have pointed out, it's not to be used to smash garlic, but those are minor points. It cuts very well, and that's what a knife is for. Kudos, Kyocera!

I thought a long time before buying one of these knives. I got this model, FK-110WH. It's a 4.25 inch long bladed general utility knife. I'm not sure that I'm the typical purchaser of this type of knife because I bought it for just one thing, to make SALSA.

We own a lot of very nice knives. 8 of them are Wusthof knives, two of them are Cutco and then this one. I bought each of them separately and for a specific use so I'm not with the reviewers who complain it's lack of versatility. That's fine with me as I have other knives for those things. It's true that there are some things you shouldn't use a ceramic knife for. If you're not OK with that, get something else.

My family loves salsa and I'm the go-to guy for that. I've been using an 4582/12 Wusthof knife. That's a 12 cm prep chef's knife. It's my favorite knife and I'd recommend it to anyone. It's plain and simple the best all around knife I've ever owned. But for slicing fruits and vegetables, this Kyocera ceramic is far and above it.

The first time I used it my mouth popped open. And remember, I'm not comparing it to cruddy knives. It may be specialized but if you do a lot of slicing, you should have this knife, or one like it in your block. Even when cutting along the edge of a slick tomato skin, this thing will go right through it rather than slipping of the side and cutting your finger. If you're worried about it being too sharp for you, don't. The sharper the knife, the safer it is. You want your knife to be so sharp that it cuts right through whatever you intend it cut. It's when the blade is dull that it tends to go off target and endanger your digits.

30 bucks. The cheapest knife I own but I'm sure I'll come back to it again and again. I probably wouldn't buy this type of knife (ceramic) in the "Chef's" style but to slice vegetables, everyone should have one.

Umbra Hold Up Knife Storage BlockI bought this to hold my Pure Komachi colored knives, and I'm very happy with it.

It's not perfect definitely mind the dimensions to make sure you have a place to put or hang it and that your knives will fit. It's taller than I was expecting, but narrow enough that it fits pretty much anywhere on my kitchen counter unobtrusively. It also comes with hardware and instructions for wall-mounting which is great and I would certainly consider mounting it because of how low-profile it is.

While the shadows in the product picture makes it look like it's a silver metal, you'll read in the description that it's white plastic. The plastic is thick, rigid, and very sturdy, and fits my 8 brightly colored knives of various sizes well. I'm not able to get them to hang in a uniform way (like the three example knives do in one product picture) but it's not really a big deal.

However if you're getting this for display rather than functionality, there might be better options, but this is certainly worth the price!

This knife block tipped over after placing one knife in it. When it fell over, it smashed an expensive espresso cup, shattering the glass all over my counter and the floor. However one is supposed to place knives in it is beyond counter-intuitive. Umbra usually sells well-designed products. This is not.

I have to agree with the other reviewers, the item was made of lightweight cheap plastic. I was worried that it would not stand up against the weight of the knives. So far it has done well however I have not loaded it to capacity. It does look nice though.

I love to cook and the cats love to watch me cook. I needed something that would allow me to grab a knife quickly. I was reluctant to get magnetic strips because of the cats. (They are cute, but not bright and I was certain they would view the knives on the magnetic strip as something to try to jump up to slap down.) This product is a bit bulkier than I would have liked. It also did not hold a smaller paring knife like I wanted. But it serves the job I wanted and is pretty low-key in not commanding attention in my kitchen.

I fell in love with them and wanted to get more for the following year so I got three more colors. They are easy to wash and the knife is actually pretty sharp. I took my sets camping and they cut through steak and chicken. The only downside that one of my friends mentioned is that the fork and spoon are shallow. For me it is not a big deal and I didnt notice until he brought it up but if you like to eat soup or something like that it might be a little harder. Over all I really love this set, and the colors are fun and bright, better than a plain silver!

These look great mixed with their other colors.

It also looks great in my picnic caddy and the colors are very pretty in person.

The only drawback is that sometimes the paint can be scratched.

The ones I bought from Amazon were great but a set I ordered from somewhere else had a tiny scratch on the side.

No big deal, I can probably paint over it. I would still buy them again.

This knife is really low quality they sell for about $5 in Japan and that really shows in the workmanship.

It's blade is very dull out of the box and too light for any practical use. The best part about this knife may well be it's real-wood handle!

Unfortunately I can't recommend anything in this price range, you will have to spend at least twice as much at a local Japanese store or here:

The blade is about 1/8" thick & SHARP, most pizza cutters say their sharp only to arrive very dull. This one is sharp right out of the very nicely & professional packed box. Looked like a large picture frame box!! I love my pizza's and hate putting in all the work only to have a cheap cutter rip off all my toppingsno more! Problem solved, you'll really like this cutter. It took me 5 different knives to get to this one, and one rocker cutter. I do not like the rocker cutters myself, I find it too hard to cut same size pieces accurately, and it was time consuming. I want to cut it fast & enjoy. The overall measurement is 23 1/4" from tip of blade to end of handle!

What a quality item this is! What I like about it is that you can make a pizza on a pizza stone, cut it right on the stone, and have the pieces be as small or as large as you want. The advantage is that you can cut the pieces much smaller than usual with the greatest ease and thus pretend that you are not eating as much as you usually would. It also works with pizza shop pizzas to make the slices much smaller. This would make the best father's day gift, combined with an Emile Henry pizza stone. Or THE wedding gift. I just came back to order some for gifts, since at one point they were down to just one when we originally bought ours. We have used it for a long time now and it seems as sharp as ever.

I make melt and pour soap and order my soap base in 25-pound blocks. This is the only thing that works! The money I save by purchasing my soap base in bulk will eventually pay for this knife.

Solid feeling handles, sharp blade that cuts easily and cleans up just as easily. What's not to love? The hole at the end of the blade is a nice touch. I have it hanging on the rack with my cooking pans. Both of my sisters now want one of their own.

We all love how you can cut straight down through with little to no effort. The toppings all stay where they're supposed to instead of getting shoved to one side in front of even the large pizza wheels. It's also much easier to get accurate cuts than with a pizza wheel. No more having several large pieces and several much smaller ones.

This cutter should last me the rest of my life. I used to buy a new pizza wheel every couple years because they would dull and/or the rivet and hole would get worn out and the wheel would get sloppy. If this ever gets dull, I can just run it through my knife sharpener.

We have a set of these and the 4" knife is my favorite. I have small hands and find it very easy to handle. Make sure you buy the good Henckels and not the ones from Japan bought some steak knives, they were cheap and cheap is what I got.

As I said, this is the knife I always grab from the block, if it's dirty I wash it so I can use it. I have other nice parring knifes such as Cutco but I just love the feel of this one. I normally don't write reviews but this one didn't get what it deserves. I've had it over a year and it keeps a nice edge. I've sharpened it once or twice and there not much more to add. Buy this one and you will not regret it.

Cuisinart 14-Piece Triple Riveted Cherry Block Cutlery SetVery nice set of knives. Keep their sharpness and are in a nicely finished cherry wood block. Most sets are held in an oak-colored block, but this dark wood looks very good on the counter.

This set claims to have full-tang construction, meaning that supposedly a solid piece of metal should run all the way from the tip of the blade to the butt of the handle. After about a year of use, the handle of the chef knife completely snapped offabout 1/4" from the end of the blade while slicing a steak, sending the blade falling to the ground. The metal blade only extends into the handle for about 1/4". The rivets and metal butt are just for decoration and the cheap plastic handles become brittle quickly.

I bought a set of Cuisinart knives in 2007. Recently they developed large cracks in the handles. I contacted Cuisinart by email and was directed to another company who manufacturers the knives for Cuisinart. After a couple of emails back and forth, I was directed to a website and allowed to pick a similar set for replacement. (The set I purchased was no longer available.) In just a couple of days I received the replacement set. Can't complain about the warranty service!

It's a great looking set but the blades dull fast. We have to sharpen the steak knives almost every time. I like it and recommend it but be prepared to use the included sharpener.
