Be careful with it...I'm kind of nervous using it at work since I use it to cut up apples!

I bought this knife to bring to work for my lunches. It is a perfect size for a lunchbox and cuts through tomatoes, etc like a hot knife through butter. Make sure you clean the knife before putting it back in its sleeve.

Three years ago I bought this little Japanese gem in San Francisco for less than $8.00, and it is the pride of my small-kitchen-knife collection, and beats all European attempts at a knife this size. For an inexpensive knife it is impressively made. What is not advertized clearly is that this blade is a thin splinter of ultra hard carbon compounded steel sandwiched in flexible stainless outer layers, a feature usually costing much more. It was sharp out of the box, but still needs, as all knives do, honing with a ceramic stick after each use, to keep a razor edge. (BTW, those folks who boast that they go years without sharpening should learn to sharpen and hone knives, as you can keep it new-sharp that way, forever) If you have a hand lens you can check out the sandwich construction at the base of the blade where it goes into the handle. Edge retention and utility of this knife is superb ..... a total winner!

This is such a good knife, like most products made in Japan.

I've had it for more than 2 years now and I haven't had to sharpen it yet.

It cuts just about anything, and the small size and handle shape give you great control for peeling etc.

It handles tomato and bell pepper skin very well considering that it's not serrated.

Definitely recommended!

Some things aren't optional in the kitchen and knives are close to the top of that list for me. I have a couple Shun products, the most used is their 10" Chef's Knife, and wanted to experiment with ultra-cheap products for a while before I could get my hands on a traditional Japanese set. This knife is truly incredible for the price.

Nothing impresses me more than a quality product at some absurdly low cost and I still can't quite figure out why it's so cheap; it's made in Japan, the materials aren't bad at all, and even feels decent in the hand. It arrived impossibly sharp for a cheap blade and it's even held up well with frequent use with no signs of the handle or scabbard flexing at points where two materials are joined. I even think it's a pretty handsome little guy. While there are certainly other products that may be better in a variety of ways (better steel, better materials, etc.), I've never held a ten dollar knife and felt so confident in it.

If you want a genuinely good, downright cheap knife, you couldn't do better than this.

It is very comfortable to use, and cuts better than any other knife in my collection. As I used it for cutting apples, I kept switching back and forth between this knife and another, and this knife clearly cuts better than the other. It has served me well now for cutting fruits, vegetables, and for trimming excess fat from steaks. However, there are some things you should know:

1) When you buy a knife, remember that it eventually will need to be sharpened. When it is time to sharpen THIS knife, I won't be able to use my standard knife sharpener because the angle of the blade on this knife (and Santoku knives in general) is narrower than on German/Western style knives. Yaxell sells their own sharpener, but there are other inexpensive, well rated sharpeners available on Amazon that are designed for this knife. If you don't have ANY sharpener yet, you might consider one that can handle both Westernand Santoku-style blades.

2) The small size of this blade means it is definitely NOT a chef's knife. This has a 5-inch blade, whereas a chef's knife will generally be in the 8to 10-inch range. I was trying to use this knife for chopping Romaine lettuce for a salad, and had to switch to my longer chef's knife instead. I use this smaller knife a lot when I am doing smaller more precise cutting, but this is not a substitute for a chef's knife.

3) The manufacturer recommends that you NOT use this knife for cutting through/around bones. So, use something else if you are doing something along the lines of carving a chicken.

4) This is a great knife, but there are some great alternatives that are much less expensive (some below $30). Do your research, read reviews (I'm a fan of Cook's Illustrated's equipment reviews), and decide for yourself whether the extra cost is worth it.

I am a chef and in my job I normally get through a lot of items... knives, but

this one is one of the best I ever tried... nothing to do with average but better

known brand like Global... This really makes your work easier!

I got the Zen knife it's 37 layers; also a Yaxell knife (you can't find this model in the US only in Europe). I am writing a review as a higher model it can only be better (as I have an 8 inch Gou Yaxell chef's knife and it's amazing). It's the same size as this knife. I got it as a present. I was looking to buy the Shun knife and this one in every aspect, beat the hell out of it. It's more balanced and sharper I got it as a shushi knife, I cut raw fish as if it is butter. I'm writing a review as no one else wrote any reviews on these knives. This is the best knife for the money. It might be a bit expensive, but spend a bit more and it is worth every penny. In my line of work, as a chef, I used to work with a lot of knives from Victorinox, Global and even the Shun, this is the BEST knife that you could buy for yourself and it will last forever (with a bit of sharpening). If you buy this knife, please write a review so that others can learn about it and buy it as well. Enjoy your cutting!

However, if you are a foodie/chef who really appreciates great tools, this is a wonderful knife. It has a great feel and balance and the knife Tang (the metal) extends all the way through the handle for extra strength. It makes top-of-the-line Henckels look like bargain basement dime-store knives.

The edge cuts smoothly through anything that you throw at it (though I have to admit that I didn't test it with the cliche "cutting through metal" stress tests. It is my favorite knife for cutting vegetables, de-boning a chicken or cutting beef into strips for stir-fry.

The price of the knife is incredible so it is not for the faint of heart or the budget minded cook. I don't know that I would spend the money for it myself... however, it is a pleasure to own and use so from that respect, if you are looking for a thoughtful and significant gift for the chef in your family, this knife makes a great addition to the collection.

this knife is just as advertised its amazing its razor sharp and cuts like nothing is even under it. I only had it for a day so far and i mean thats a restaurant day and it was still sharp as could be...the only thing that scares me about this knife is how light it is, like super super light, if your not careful i feel like breaking the blade could easily happen, just have to know your going to have to baby it and if your only using it at home you really have no worries then...(Ps avoid anything with bones or relatively hard just IMO)

I absolutely love these! My daughter is one and a half and she can use them! They are a little large for her but the forks actually keep food on the spokes, they are a bit pointy but very kid friendly. They're super sturdy, non of this flimsy plastic crap. Love love love them.

I haven't had these very long but they seem to be wearing well (they haven't stained or turned white in spots from the microwave/dishwasher). The large handles make it easier for kids to use and the mix and match colors are fun. For the price I paid and the amount of stuff I got, I have no regrets. Very good purchase.

Our board came as a gift. It looked nice, but after one light use we noticed that it was deeply cracked in several places around the boarder and in a couple of places right down the middle. We had not left it wet or otherwise treated it poorly. The board seems to be a very poor product. We're waiting to see if the company can offer us any help.

Many went missing or couldn't cut butter after awhile or ended up with broken tips. This knife set has all the basics covered, arrived nicely and safely packaged and sharp. The block helps prevent the knives from coming in contact with things that would dull them, but it also seems to prevent the knives themselves from disappearing. Maybe because guests know it would be easy to spot a missing knife.

Careful here....I was so excited to get these knives.....but wash by hand or get ugly rust stains as I discovered after one normal eco wash!!!

This foil cutter has been a real pleasure to use. It works effortlessly and quickly...only a quarter turn(or a little more to be on the safe side) and your foil is separated. I like the distinctiveness of the design---the sliding sections rather than being hinged on one end like most other squeeze type cutters. It is very nice looking and well constructed. I bought this item as a replacement for a completely different wine foil cutter. The original cutter was the type that had fixed cutting wheels. e.g. The wheels did not turn as you tried to cut the foil. With this cutter the wheels DO turn. Minor detail, right? Absolutely not! The fact that the cutting wheels turn while you're cutting the foil makes 1,000% difference in the experience. In fact, this product does it's job well whereas the previous product I purchased was moderately terrible.

I think in previous reviews people complained about the build quality or the cutter being plastic or whatnot....don't worry about that. For $5 (or $7 or whatever I paid) what are you going to expect? The build quality, in my opinion, is just fine for this type of product. I feel like it's plenty sturdy and, to be honest, if this one broke and I had to buy another one I would do it gladly.

Gourmet Settings Silver Tear 20-Piece Flatware Set, Service for 4After 12 years (and many missing pieces), it was time to update my flatware set. My old set was Martha Stewart and had served me very well, but I wanted something "different" this time and the entire handmade Gourmet Settings line definitely caught my eye. I let my family vote on the pattern, and they all liked the twisted look on the Silver Tear set.

After receiving the set, my first impression was that they looked absolutely awesome but they felt quite a bit heavier than what I was used to. They also do not rest completely flat on your finger when you use them (because of the round shape of the stem). But this didn't seem to bother anyone in my family except me so I decided to wait awhile and see if it was just a matter of getting used to them.

Well I'm glad I waited because after only a week of daily use I am completely used to them. The quality of the set is exceptional and I love they way they look and feel in my hand. The bowls on the spoons are very smooth and comfortable to eat from. I have added the demitasse spoons and the spreaders and will eventually purchase another 4 place settings.

I also purchased the J.A. Henckels International Flatware Tray to store them in (see my uploaded picture above).

If you are looking for something out of the ordinary, this set is sure to please. Also, Amazon has the best price that I could find anywhere (and believe me I searched..).

I have been thrilled with the Gourmet Settings Silver Tear flatware set. I had been given a 20-piece set by my son for my birthday last year and it met and exceeded any criteria I'd had for flatware size, weight in hand and durability. I was specifically shopping for flatware with a woven handle when I stumbled across this pattern. I ordered because the pre-Christmas sale price was too good to pass up. I almost didn't order them because the handles looked thinner than some other brands.

I'm thrilled I ordered this set because the handles are not skimpy at all. In fact, the reason they probably look thinner in comparison to some other brands is because this flatware is very large, real shovel-it-in large. For example, the table knife is 9-and-a-half inches long, and the teaspoon -the smaller spoon of the place setting -holds over two teaspoons of liquid. I literally had to purchase larger drawer holders to accommodate these pieces.

These Silver Tear pieces are hefty and beautiful, and even when not on special sale are a great value.

After extensive reviews of flatware in this price range, I took a chance on this set. Many reviews had said flatware began to rust which I find completely not acceptable. This one according to reviews for the most part said it does not happen. One person says the knives were not sharp...Are you kidding me? These things will cut steak and that's pretty good for a flatware knife in this price range, although I will be buying Global steak knives soon as I am particular about my steak knives, and Global is as good as Shun for a lower cost. Anyway, the heft in these pieces is perfect. I like heft. In addition, the sizing of each piece is slightly on the larger size which I tend to prefer. I find the design unique, and did note that to many complaints existed for the other set with the musical staff curl at the bottom. That is rust happened to some people, and I do not do rust. While I expect this can stand up to a dish washer, I hand wash all my flatware anyway. It is shiny and keeps that shine, and is not obnoxious in the shine. I love the semi rustic design and it works with my Le-Creuset stone ware plate settings. The photo of this product is accurate. I received this item well packaged (Amazon has greatly improved in this area ), and did get the product a few days earlier than anticipated. I say buy it if you like the design and enjoy heft and rustic. However, although this is quality, it is not designed to use the spoon to scoop frozen ice cream for you risk bending. Buy a ice cream scoop for that, or spend 200 on 80/10 Nordic style 20 piece flatware set or 50 dollars for a four piece highest quality set; the price of the G.Settings Silver Tear 20 piece setit is a fine buy and will last, the price is right! One thing though, back of these items is stamped 80/10 but I would still suspect a possible bend with frozen ice cream, and this is why God made ice cream scoops! Again, knife had edge!

Wusthof Classic 6-Piece Steak Knife Set

Wusthof Classic 6-Piece Steak Knife SetWe received these as wedding gifts in mid-2003. We have several other Wusthof Classic knives purchased as open stock. The steak knives we received as a 6-piece set. We treat these knives better than we treat our friends. They get touched up by the steel, they don't soak, they are hand-washed and they go in the block when not in use. However, last night an approximately 1 cubic centimeter chunk of the handle nearest the blade fell into my wife's dinner. She was shocked, as was I. Upon closer inspection, another steak knife from the set was about to suffer the same fate. I think it must have been a bad production run given all our other knives, received at the same time (and which get used about the same amount) all look fine. I sent them back yesterday so I'm interested to see how well they honor their warranty.

Update 1/23/07: Received replacement knives today. Putting them back into the block was bittersweet because I noticed another one of the original set is developing a crack, this time at the bottom. Not sure what the issue is...

Main point: They appear to honor their warranty.

Many people might scoff at a set of steak knives at this price, My only retort is to relate the story of sneaking around (because of my wife's non belief that there was a difference) and buying a set of the Wusthof Classic Steak Knives and using them for the first time. No matter what knife you have laying around and how sharp it is, the Wusthof is superior. It is the most obvious in steak knives because you use them everyday.

The edges are plain edged, honed by hand. These are NOT your STEAK HOUSE knives no serrations. Your SLICING fine meat not disposing of a lost tourist in Texas!

Hand washing only, even with today's more sophisticated dishwashers with knife compartments preventing dinging and other damage to the blade, the high water heat and chemicals in the diswashing soap will ruin ANY knife. Think of the glass that you've had for years that you've run through the dish washer. Look closely and you'll see the glass is actually ETCHED from the detergent. And the old wood handled paring knives. Notice how they are duller and harder to sharpen? The dishwater temperature and chemicals from the detergent have damaged the steel. By the way, there is no SUPER steel that isn't known to all knife makers. Metallurgy is an exacting science, a formula to be followed, not magic with the Sorcerer and Mickey Mouse as his apprentice. Wusthof PROUDLY stamps the which metal their knives are made of right on the blade. It may be heard in a sales spiel from the college kid selling complete cutlery sets, that knives can be dishwasher cleaned. Nope.I don't put my saw blades, drill or router bits in the dishwasher either. They are precision edged tools just like your knives.

I'm very happy with this purchase everytime they come out for a meal. They feel comfortable, familiar like an extension of your hand, as all the Wusthof Classic cutlery do.

Good weight, balance and excellent hand honed edge. This knife is the one my wife reaches for first for her needs in the kitchen. Never argue with a woman with a knife in her hand. Especially a Wusthof!!

I love all the Wusthof knives we have. Before we got married, we had a functional set and a really crappy set from lord knows where. We had no idea just how good knives could be. We were blown away when we tried these for the first time. We had these since July and haven't had to sharpen them yet (I was sharpening my last set all the time). When were were looking into the steak knives, we really couldn't see the difference between the expensive version and the cheaper ones. We went on faith that the expensive ones really were better. We got them, and tried them on some filets. Huge difference from our old set. Then I went to visit my father and found he had the cheaper Wusthof steak knives. They too were better than the crappy ones we previously had, but there is a significant difference in quality and ability to cut between the two Wusthof choices. If you have the money, go for the more expensive set. You won't regret it.

These are damn sharp knives, comfortable to hold, and of course they cut a ribeye like the proverbial butter. Heck, they cut an overcooked, leathery skirt steak the same way!

These were a follow-on to the complete Wusthof knife set. I'd recommend Wusthof highly to any halfway serious chefs out there. This is serious German steel at a reasonable price.

Ordered these steak knives to add to some Wusthof pieces we had recently purchased. As with the previous Wusthof knives, we are so pleased! These are excellent knives. They're a little larger than the 25-year-old steak knives we were replacing, but they don't feel heavier or cumbersome in any way. And they are unbelievably sharp!

For cleaning, the Wustof website states:

"If you value your tools, we recommend washing your knives with warm, soapy water after each use. Rinse carefully and dry with a towel. Technically, WÜSTHOF knives are suitable for cleaning in the dishwasher (except knives with wooden handles), but there are a number of reasons why precious knives should not be cleaned in a dishwasher..." The website goes on to state the reasons why you should hand wash their knives, but I was happy to know the knives would be okay if they ran through a cycle in the dishwasher. In a busy household, a knife is bound to sneak into the dishwasher now and then (that's what happened to the old wooden-handled steak knives that we are replacing) and it's great to know we won't ruin the knives if it happens.

The only drawback is they're so darned expensive, but we think they're worth the investment. Would buy again, and recommend.

MIU France 4-Piece Ceramic Knife Set

MIU France 4-Piece Ceramic Knife SetI've only had these for a short while, so I don't know how long the edge will last. However, they are very sharp and easy to clean. Decent grips, but wish they were a little larger for easier handling. These are made in China, not France, which is a bit disappointing. Although, I can only blame myself for not researching a little more. The price should also have given away that the origin was not France. Another minor gripe is that they have round tips. This makes sense since ceramic is so brittle, but a sharp tip is sometimes needed. Something to think about before going ceramic, but I think a well rounded kitchen has both steel and ceramic knives.

the knives are excellent. If you have never used a ceramic knife, they are very sharp. They cut clean and easy. I would rather use a ceramic knife before using stainless steel.

These veggie knives can be very expensive. This is a cheap version but it works fabulously! It's strong, sharp and easy to hold and handle. I like the colors too! I would definitely buy this again.

Zwilling JA Henckels Professional 'S' Utility SetI wanted a serrated knife dedicated to cutting Spanish meats that I buy from from a local specialty market. I own other Henckels knives so I know they make a sharp, quality knife. I came across this set and found out the same knife by itself from Amazon is $57! With this set, you get the same $57 knife, shears and a cutting board for less than the price of the knife alone. I jumped on it and purchased this item even against the review about the board cracking. To remedy that, I just bought some Joyce Chen bamboo oil for the board and I have not had a problem. The knife is just what I expected from German quality knives. The shears are great too plus made in Germany (they go for $20 here on Amazon). The board is approximately 12"x10" and it is made in China. I would recommend this set to anyone looking for a great serrated knife for cutting everything from meats to fruits/veggies.

I was happy with my purchase when I received it. The shear is the main reason I bought this set and it does meet my expectation. The cutting board is a nice bonus. It worked fine at first. But after only three uses, there is a very noticable crack on the edge of the board. After wash, the crack becomes even bigger and deeper, and more obvious. I started purchasing things from Amazon recently and this is my first compliant. I don't know what I could do since I used the shear and the cutting baord already.

I have been using a Chinese kitchen knife for most cutting, I like the wide flat blade that I can pick up little pieces when finish chopping but the knife gets a little heavy after a while. I saw this Santoku Japanese style knife in Target Store, the packaging had the handle sticking out. When I put my hand on it, I like the weight and balance of the blade and the handle seemed comfortable but it cost $37.95, more than what I want to pay for a kitchen knife. Then I found this exact knife on Amazon for $17.98, I ordered it immediately.

The knife arrived in five days in a huge Amazon box, 14x20 inches,(come on Amazon guys!). When I first used it, it was not as sharp as I would like it, after I pulled it through my wheel knife sharpener ten times, it was as sharp as any knifes in my collection. I love this knife, it is all about weight and balance and the angle of the handle. I have small Asian hands and it works well for me. I treat all my knifes with respect, never wash knifes in auto dish washer, I sharpen my knifes after every use. My wife is happy.

This knife arrived just as decribed and works really good. I would highly recommend it to anyone looking for a great addition to their kitchen.

Got this knife from my brother in-law for birth day gift and it is a very nice addition to my cutlery collation vary sharp and keeps an edge for a long time. Even know the knife is made in china it has the high standards that you would aspect from the Henckels line up and if it was manufactured anywhere else it would cost allot more. We have a half dozen Henckels knives and have been very happy UNTIL NOW. This knife is clearly of an inferior line in that the steel had inclusions in it which rusted the first time I washed it. Yes, there were rust spots on the the stainless steel blade. Poor quality control for this made in China version from the classic German knife company. Surprisingly customer support was disappointing as well. Avoid this line of knives.

My only complaint has to do with the knife block, which is not customized for the knife set. The knives all fit in the knife-block slots, but they fit loosely and sit at odd angles. Also, the knife block only has 6 slots for steak knives. This was a problem when I bought the matching steak knives, because they are sold in sets of 4, so you either have 2 too few or 2 too many for the number of slots. A small thing with such a good set of knives, but I will be buying another Henckels knife block.

I've been meaning to update my kitchen knives for many years. Finally, thanks to those nice people at Ideara, I had enough gift vouchers to buy this set. I've only had them for a few weeks but love them. First, they are sharp I know volunteer to do the vegetables and other prep in the kitchen. They also feel good, with a great balance which makes them all the more useful. I am hoping that these will be the last knives I ever buy! I recommend them highly.

as soon as I opened the box, I noticed something wrong. the block is made of bamboo and in thin, loose plastic bag with a knot loosely tight. the bag has the "made in china" sticker. Amazon just lied to me to see this product. I don't even want to guess if these knives are actually made in Germany. the knives box was prepared in a sloppy manner. the lid of the box not even close proper. for $499 knives set, I think I have the right to expect better quality. I am suspecting the knives are made in china as well. this whole order is going back to Amazon.

I am speaking with Amazon customer service representative and this product is sold by a vendor (third party) not Amazon. it sold through a Amazon. This looks like something someone bought and used and didn't like. they re-packed and resold as new product through Amazon to trick buyers to think this is a new product. this ia biggest false advertising so buyers beware.

I ordered the Four Star II wanting to greatly improve my kitchen knives. The knives were nice however the block was poorly made. I compared the same block with a local retailer and their block was far superior. One slot in the block was at an angle that the knife would not fit. Given my disappointment, I purchased Wustof Classic Icon and found the manufacturing and overall quality to be superior. I am thankful for Amazon in their handling of the entire process.

Even at that price you are paying mostly for the name. The knife functions well other than cutting through that tough layer between fat and muscle on meat. The level of workmanship is good and the design functional.

For me, personally, I just didn't like it's feel so I gave it to a friend that that sort of thing was not important.

This knife is awesome. I use it to cut bagels and rolls and to slice tomato's. I also use it to slice sandwiches of all types. I recently tried it cutting a block of parmesan cheese. It makes short work of every task I have used it for. Just another testament to the quality of Wusthof products. Highly recommended.

Global Chef's Knife

Global G-2 - 8 inch, 20cm Chef's KnifeThis is one of the first global knives I bought. I loved it the first time I held it in my hands. What impressed me most was the perfect balance, the lightweight, and the sharpness. However, what may be perfect for me may not be perfect for you. I'd recommend anyone who is shopping for cutlery to go to a store and try how the knife feels in your hands before buying. And if you can borrow from a friend to try, that's even better.

Having used this knife for several years now, my initial impressions haven't changed. This is still my favorite knife for most tasks. I maintain it regularly with a steel and it is as sharp as it ever was. I have found though that for certain tasks like cutting slits into an onion for dicing or cutting root vegetables, I do prefer a heavier knife (that's why I bought another forged global knife), but that is just personal preference. All in all, a great general purpose kitchen knife.

I have been a keen amateur chef for more than 30 years. I was given a full set of Sabatier chef's knives as a wedding present and have been using them since 1970. I had recently decided that 30+ years of sharpening had taken their toll on the Sabatiers and that new knives were called for but what should I buy?

At heart I am a traditionalist and the appearance of the Global range had put me off them. Fortunately I recently read Anthony Bourdain's Kitchen Confidential and noted his ringing endorsement of the Global range. I decided to buy the 8-inch chef's knife to see how I got on with it. I have never looked back!

Despite its rather unconventional look, the knife has excellent ergonomic design. It is well balanced, readily gripped when wet and astoundingly sharp. TMOT, you are unlikely ever to meet a sharper knife. Hold a sheet of paper from the top with one hand out in front of you and then cut downwards with the other this knife readily cuts the paper without it being tensioned. That is what we mean by a sharp knife.

As noted in the Amazon description, the knife's handle is fairly small. My hand is a medium male hand about 3.25 inches or 8.5 cm across its back. The knife is an excellent fit for my hand and could probably accommodate a hand upto 4 inches or 10 cm across the back. However, I have seen some chefs with meaty hands that might find this knife a less than perfect fit. The knife is fairly light it weighs 5.5 ounces or 160 grammes.

In all I am well satisfied with this purchase and shall go on to replace all my Sabatiers with the Global equivalents. Oh yes and if you haven't yet read Anthony Bourdain's Kitchen Confidential, buy that too but be careful not to cut yourself when you start laughing thinking about some of the things he has to say about professional cooks...

I've been a German knife snob for years. But this 8-inch chef's knife by Japan's Global is the finest blade I've ever owned. Period.

Maybe it's not as easy to sharpen as a Wustof or a Henckel, but then again, it holds its edge ten times longer.

This knife amazed me when I took it out of the box. I lightly dragged my thumb across the edge and felt some of my skin shave off, and looked closely at the edge to see flakes of my skin on either side of the blade. I tested it out on a tomato eagerly and it fell through it like falling through air. You cannot feel any friction whatsoever as the knife goes through the food. This knife is well worth the money, and really for a knife of such quality, its not that expensive.

It is lightweight and all one full piece of steel, which means all food can be washed from it without sticking in any cracks or seams, as well as rigid durability. The steel its made of, apparently "Cromova 15", shines in my eyes like the first time I got it every time it is washed, and repels water, so the juices from various foods drip away to help prevent slices of food sticking to the side of the blade.

I gave this knife four stars, because unfortunately, the edge will start to deteriorate after about 3-400 strokes to the board. And it is exceptionally difficult to sharpen due to the strange edge these knives have had put on them at the factory, BUT if you regularly stroke it across a mediocre steel once or twice on each side after a few uses the edge will remain factory sharp for quite a long time. This knife will make all your foodie friends jealous. I left mine at work for about 4 days whilst I was gone, and the head chef (who readily agrees it is the sharpest knife in the kitchen) used it heavily, disregarding his wuhstof collection. I came back and he had not honed the edge, so it had deteriorated well beyond repair to its original condition. Make sure you keep it sharp and treat it like family, and this knife will treat you better than any knife I have used, and I own Shun, Whustof, Henckels 5-star, Sabatier, and other various brands. I am sold on global.

So... you want to buy a nice knife for the kitchen, but aren't quite sure what's best? The truth is, there is no "best" knife as everyone hopes for. The idea is finding a knife that feels right in your hand, is sharp, stays sharp, and is easy to re-sharpen and hone.

If you're looking for a heavy knife that uses its own weight to crush through everything in its path, keep looking. Global knives are extremely light. That's the number one complaint I hear from my coworkers as to what they don't like about my knife. But the blade of this knife is very thin and holds an edge better than any other knife I've seen. So when I'm cutting an entire five gallon bucket of carrots for crudités, the knife glides right through the last carrot as smoothly and evenly as it did the first carrot. I rarely ever sharpen this knife, and I use my honing steel once a day at the beginning of my 10-12 hour shift. And despite this, everyone who touches my knife is always amazed by how sharp the blade is. For me, low maintenance is a blessing. Who doesn't love that?

The second complaint I hear a lot is the grip. Many firmly believe that the stylish metal grip becomes slippery when wet or combined with a little grease or fat from the food that is being cut. Sure, that's true. But first off, what knife handle doesn't get slippery when fat or grease is involved. That's what fat and grease does. It makes things slippery. Second, your knife hand should be holding the knife, not the food. If you put the knife down to handle the food, you should be washing your hands. Now dry them off and there's no worries, right? That complaint never made any sense to me.

My best recommendation to anyone looking for a good knife is that you first go somewhere that allows you to take a few different knives for a "test drive". Just chop a few things and see how it feels in your hand. If you live in a place where that is out of the question, then just keep in mind what qualities best fit your needs, and I wish you the best of luck with your selection. If this is the knife you choose, I know you won't be disappointed.

These are two very good knives for the money. A few strokes through a ceramic sharpener and the edges have a good sharp edge that smoothly slices tomatoes and tough meats. The stainless steel blades do not hold an edge as quite as long as a high quality carbide steel blade does, but these knives cost much less too. These knives work very well for meat and most vegetables. The knife handles are well shaped, I like them much better than any wooden knife handles I have.

The smaller partoku knife is handly for smaller items and for fine slicing. I haven't gotten used to using the larger santoku knife yet, I'm still used to using a chef's knife for larger items.

The plastic covers are great, they were an unexpected surprize! I've moved the larger cover to protect my favorite chef's knife.

That larger blade is awesome. Sharp and holds a edge well, but the handles are a bit small for my comfort. I can use them fine, but if I am chopping for 20 minutes it gets me. I am a guy, but I don't have "shaq hands" The little knife is my camping knife and it can do anything in a pinch. I dice raw potatoes with it (slowly, it's not made for that I know) I really like the cheap plastic sheaths. Makes them great to bring to remote BBQ. And for the price you won't cry if you leave one, but the quality you might... I love Chicago cutlery
