The smaller partoku knife is handly for smaller items and for fine slicing. I haven't gotten used to using the larger santoku knife yet, I'm still used to using a chef's knife for larger items.
The plastic covers are great, they were an unexpected surprize! I've moved the larger cover to protect my favorite chef's knife.

That larger blade is awesome. Sharp and holds a edge well, but the handles are a bit small for my comfort. I can use them fine, but if I am chopping for 20 minutes it gets me. I am a guy, but I don't have "shaq hands" The little knife is my camping knife and it can do anything in a pinch. I dice raw potatoes with it (slowly, it's not made for that I know) I really like the cheap plastic sheaths. Makes them great to bring to remote BBQ.
