Eversharp edge that gets even sharper each time you put in back in its holder. We've had these knives for years with great results. Thank goodness for Amazon and their vendors. My sister had attempted to purchase one of these for years, due to import issues, it was almost impossible to acquire one. Thankfully Amazon bridged the gap!
