Zwilling J.A. Henckels Twin Signature 7-Inch Hollow Edge Santoku

Zwilling J.A. Henckels Twin Signature 7-Inch Hollow Edge SantokuThey aren't kidding--this thing is razor-sharp. It needed no tuning up before I used it for the first time. The handle is balanced so that one feels almost no weight... which is unfortunate, because I like the weight for chopping. But the hollow-edge design is wonderful--the mushrooms and onions I sliced up were thin as paper, and didn't stick to the blade. I'd recommend it.

Good balance great for light-duty chopping and mincing where you want to be close to (or directly over) the blade for control. All claims about grippy foods not sticking to the blade are bunk tomatoes (etc) stick like they do to any other non-dimpled blade. High quality metal. Recommended if you find your standard chef's knife lacking for control.

It is hard to say one brand is better than the other when all the brands have different variations of one type. I suggest buying the knife based on usage and how the handle suits you. Most of the high quality knives are similar in construction but the handles are different in each one. It is better to go with the handle you feel most comfortable with, I believe the grip is very important in terms of control.

A good suggestion is maintaining it using a high quality sharpener or taking it to be sharpened.

This knife can pretty much do anything, except slice bread, peel fruit, and act as a cleaver. Foods do stick to it when you chop, like others said, but it is still a good knife. You will still need other tools, but this knife can replace a few similar sized chef's knives you will not need anymore.

For a stamped steel knife this is quite good. Sharp, decent balance but no, even though a hollow edge santoku veggies don't effortlessly slide of the blade. Well you can't have everything for under $60. If you cannot afford a hand forged Shun--which obviously I could not-this is a good choice.

I have a set of Twins Four stars block set and I always wanted to get en extra one for my cooking back to Canada every six months. So I compared the option from Shun, Wuesthof, Twins etc endlessly....And I saw this one on Amazon. I prefer Asian knife as it's more versatile for my cooking needs. This one compared to the Four stars is ok. It's sharp but the balance of handling is not as good as the Four stars. Comfort of the grip is ok but not superior. So for the once a month every 1/2 year cooking, I think it's fine but if you want to use it day to day, get a better one.
