The second thing you'll notice is that it's weighted perfectly.
And the third thing you'll notice is that it's just ludicrously sharp.
I don't think anybody is going to be disappointed by this knife. Whether you prefer a chef's knife or a santoku is personal preference, but I think this santoku nicely combines the heft of a larger knife with the maneuverability of a smaller one. It is worth noting that with the Ken Onion line your hand really won't be comfortable unless you "choke up" on the knife, but you will get the hang of that very quickly.
