If your clicking around on amazon trying to find professional knives but aren't rich, ALWAYS GO MERCER! I'm a cook and have used knives from wal-mart status... to knives that your afraid to use because the price was so high. Then here comes mercer. They make amazing knives that are so sharp and quality.. I mean you can use and abuse these things and they will still slice through anything you put in front of them. Also, if your planning on useing knives for hours a week, mercer puts alot of research into designing very comfortable knifes with amazing balance. This knife right here (I own it b.t.w.) feels like it should cost about 60 dollars... but was a 1/4 of that. You can take this onto a professional kitchen and not get laughed at, anyone who knows their stuff knows mercer is the best value for a seiously professional knifethis thing will last you 10 years easy if you take care of it! dont waste you money thinking this is cheap, therefore not good. This is better than an equal knife that will cost you 40 bucks! (i wont name names)
