
Nice birch wood handled knife with a classic design. The handle is round, with the blade tang pressed into a round slot and secured with a ring. So far so good. However, the blade tip is rounded unlike Dexter-Russell's plastic-handled equivalent (S121) which has a sharper point. It may not be not the Sani-Safe stain-free high carbon steel. If it's the traditional steel, it will rust if you don't rinse and wipe it immediately after being used. It's not bad, but it looks odd. I don't know about you, but I typically don't have any place to rinse off a knife if I'm at an oyster farm shucking oysters. A lot of people just jam an oyster knife in ice between uses. Dester-Russell's description is that the model 23 may come with the stain-free or "classic" steel blade. If you manage to get the stain-free version, then life will be good.
