Anolon Bronze Santoprene Cutlery 7-inch Santoku KnifeFull disclosure I do not own this knife, but I have spent many hours on it, sharping it for a friend. After sharpening it frequently for him, I decided I should share my unpleasant experiences with it.

When my friend asked me to sharpen it I was impressed at first glance, especially by a mid tier knife company. It was thin, forged, and had some heft to it. To boot, after a few minutes on my whetstone it took a decent edge (I sharpened it to about 17 degrees, for those who care).

But the knife kept getting dull at way too fast of a rate. The edge of the knife would "roll over" and be back to dull after just a few uses. I tried using a steeper degree (about 20 degrees), but the edge still wouldn't last. Apprently, using a steel after each use didn't seem to help either.

I've come to the conclusion that the metal used is simply too soft to hold a thin edge. Because of this soft metal, the advantage of a thin knife like this is diminished.

To boot, I hate the soft, heavy, grippy handle.

My recommendation is to look at spending less on a more disposable santoku knife (Komachis are decent knives for the price) or more on a quality metal which will last a lifetime (Tojiro is a great value).

I receive the knife today, I dont believe it to be an original,I already have an Anolon knife and it is 70 grams heavier, has a slip case,(which this one did not,) and the wording is not in the same order on the knife as it is on the other one I have, which was alot more in price than this one, but if it is being advertised as the same thing it should come up to the same standard.

I would suggest you be aware of this when you order it, although there is no way of knowing beforehand.

The product description says glass edged,whereas the knife blade does not, (My other older one does have this written on the blade).

I am fairly dissapointed in this particular knife,mainly on the advertising not the price.
