I did my research for about a year before this purchase, now I am a grandmother who just likes to cook, or has to cook daily as we all do.... After almost 50 years of cooking, I have gone through just about every type of knife available and to be honest the price of the entire set (which I purchased with the block to go with the steak knife(s)and other kitchen set)was a bit of an investment. I am so glad I purchased the set, they are wonderful. These are the sharpest I have owned. Use carefully, but worth the investment.
