Once that was done, this knife was much better. The spine of the knife is thicker than I would prefer. Cutting hard veggies like thick carrots or nice fresh potatoes is harder than necessary due to the thick spine.
It holds an edge well enough for a casual knife, and is well finished. The stainless steel handle looks nice, and is comfortable to hold. The heel of the blade is a good thick bit of metal, which should protect your finger if you let it slip under that corner of the blade while chopping food. But really, the heel is the part which needed the most grinding to get the edge into a usable shape.It is a clever buy only if you can sharpen it (please use only japanese whet stone). It has a good greep and the stainless steel is of high quality. It should have been sharpend better at the factory.

At first I really liked the power saw carving tool. Unfortunately, the blades are super flimsy. They bend super easily and break very quickly giving this product very limited usefulness. HDPE is not quite as soft on your knife as wood, but it's pretty easy on the knife. And it's certainly not as beautiful. But, while there seems to be some studies that show antimicrobial properties of some types of end-grain wood, you really need to have discipline and diligence to keep that highly porous surface sanitary.
And if you choose a composite like an Epicurean that you can put in the dishwasher, it's harder on the knife and some are manufactured with some nasty materials. Glass is without a doubt the best material from a health & ecological point of view, but it is also the worst on your knife.
And as an important aside, while wood can't go in the dishwasher and composite, acrylic and plastic can, that is somewhat of a red herring, as some dishwashers will not get hot enough to kill all microorganisms in what is likely a scarred surface. The truth is, if you are dealing with raw meats, you really just need to either spray/wipe OR soak in water with a little bleach and let air dry, then rinse. No matter the material.
Which brings me to plastic, if you have to sanitize with dilute bleach no matter the material, then you might as well use material that is both easy on your knife and that can place in the dishwasher. But most plastics will warp in the dishwasher. To avoid the warping you need high density polyethylene over just polyethylene. The former will hold up to heat while the latter will warp.
For me the pros:
+ Easy on your knives
+ Food grade material approved for use in commercial kitchens
+ Easy to clean and maintain for most jobs
+ Won't warp in the dishwasher
+ Not as bad for the environment as some composites
Outweigh the cons:
Not as good for the environment as using sustainable wood or glass
You need to watch for scarring over time and replace
It needs to be designed with a lip to catch overflow fluids
Overall, I would use this board for most jobs in the kitchen, unless you are a diligent and committed wood lover.I had been looking for a nice white cutting board of this size for a while. However, the product arrived and appeared to be well made (I'm a bit obsessive about trivial details, and I do prefer walnut over plastic), and it sharpened my generic kitchen knife (no fancy japanese hardened steel knives here) with just a few swipes. It is also quite long enough for my knives without being too long and unwieldy. For my knife it appeared to take off some metal as some fine shards did show, and after longer use there was a thin coat of grey powder in its grooves (that can be cleaned off easily).
The walnut handle/guard has a reasonably good grip. It seems to do the job quick and well without making a fuss. It is also fairly hefty and feels right with the sharpening motion. It is a no-nonsense tool that has a very reasonable price. I'm very happy with it.This is a grooved, rather than a straight steel. This means it is taking significant portions of metal off your edge with each pass (that's the job of a sharpening tool, not a honing tool!). The grooves risk significant damage to your blade. The grooving is sort of apparent from the photo, but it should be made more explicit. Consider yourself forewarned!

I've had my CC steel for some 15 years now; it does a very nice job of keeping a sharp edge on my knives I use it before every time I cut tomatoes, and about weekly otherwise. Main knife at this point is a Pure Komachi vegetable knife the two work fantastically well together. The pairing knife feels like it is made of tinfoil. I don't know how long it will last but it is good to have a spare one of those. I would recommend as a design improvement a more grippy handle, it kind of feels like it will slip out of my hand at the worst possible time.

Believe it or not but this bizarre little plastic (Yes, I said Plastic) kitchen tool will be the best cheese knife you'll ever use. It cuts and cuts and cuts and never gums up! Never! It even cuts gooey brownies without sticking. Doesn't look like much but it is hidden treasure!I first came across it hanging with the usual suspects in a Gourmet kitchen tool display featuring traditional cheese knives. It looked flimsy so I passed on it. Then I saw it again in a friend's kitchen and decided to give it a go. I was HOOKED. I tried it on everything including freshly made fudge, and it worked like a charm. Bonus: it can be used in Teflon cake pans, no scratching.
What makes it more successful than the usual cheese knife? You can't see it in the picture, but the blade design is a series of V shapes that sweep the cheese away from the blade surface and allow air to lodge between the blade and the cheese so that only the cutting edge touches the cheese as you press the knife through.
Is it flimsy? No, but you can't go cutting down trees with it. I don't know what it's made of; the promos call it a space-age material. It feels light and smooth and flexes yet it doesn't bend or buckle when pressing through soft and medium cheese. (I don't need it for rock-hard cheese) The handle is comfortable and graspable.
It looks so small, how can it be of much use? True, the blade is only four inches long but because of its cutting prowess it can handle most store sized cheeses. There is a longer version available and I've heard good things about it, but I've had the small one more than four years and it's been plenty.
What should I worry about? Treat it with care. It looks harmless so it's easy to forget it is a KNIFE. The cutting edge is very sharp and should be kept away from fingertips and children. (I managed to sharpen it on a carbide cutter) Keep it away from heat and store it in its sheath or hang it up.
Finally, this is one of those kitchen tools you'll find more and more uses for as you encounter problems to solve. Everyone I have turned on to it loves the thing. It isn't in many stores yet, so keep a lookout if you're a tire kicker who won't buy on-line.

When I first opened the package I was surprised to discover this knife is plastic?Do not let the product material dissuade you. This knife cuts through different types of cheeses with precision.
What is unique is that there is no danger in accidentally cutting yourself instead of cheese. Most handy when copious amounts of wine is involved with the cheese slicing.
The cheese does not stick on the side of the blade and you can cut very thin slices with little effort.
Also, this knife is very attractive in appearance when having guests participate in making their own cheese selection.

The knifeforkspoon monobloc knife looks better and feels better in your hand. It's more of a piece with the other forks and spoons in the line. I bought one placesetting earlier to see if I liked it, and I did, except for the thick regular knife handle that just never balanced in my right hand with whichever piece was in my left.
A single regular knife in this series costs $20. The monobloc costs $11. In a set this size, the difference in cost is around $300.
Jasper Morrison designed this as a nice everyday set of flatware that you can also use in a more elegant setting. I use Metlox Colorstax as my everyday dishes, and have a set of Thomas O'Brien's Tiago Blue, a glossy navy porcelain with double concentric platinum rings. knifeforkspoon goes with each set of dinnerware very nicely. Next I'm going to get some of Ellen Chilewich's placemats and napkins.

J.A. Henckels Four Star 18-Piece Block Set
My husband then suggested that I look up the model number to see what other site's listed. Sure enough, when you plop the model number into a search engine, you get a listing corresponding to the FOUR STAR series along with the prices all upwards of $400.
So, to my dismay when these were listed @ $218, I jumped on it. I'd carelessly lost one of ours from our current FOUR STAR block set (only 9 pieces) and to replace it would have cost us $60. So for $218 to have 16 more knives was too good to pass up.
Needless to say that I love these knives, which is why I was on here trying to replace the one I'd thrown away.
PS, We bought our original set while we were in Germany. What we were told by the knife guy (assuming he knows what he's talking about) is that the only difference between the FIVE Star and FOUR STAR series is the handle.

Update: I've received my knives and I have a mixed review. The knife sharpener is not the same one I received with my first Four Star set. It's of a lesser quality, and a bit shorter. The steak knives leave much to be desired as well. The blade may be good, but the handles look cheap. I compared the other knives to these and they are exactly the same, so no complaints there. The only other difference was the block; the Henckel logo was stamped, as opposed to a nicer metal doodad.
When I saw these on sale, I regretted buying my in-laws the 20-piece Calphalon set only days before (on sale for $200). But after my experience with the steak "Banquet" knives, I'm happy I bought them the Calphalon set instead.
If I paid a cent over $219, I'd be upset, give it 3 stars, and return the set for a lesser count. But, at that price, the set was a great deal.Hello: To begin with, this is my first complete set of decent knives. I have been using the Henckels gourmet series steak knives, cleaver and chef's knives brought individually, though. The set is definately cheaper than buying the knives individually(I paid 219 shipped). Hence no complaints there.
The knives from the Four II series are good enough even though I like the pro or the 5 series better (in looks). My biggest complaint with this set is the cheapo steak knives that they have included with the set. These are the Banquet series knives with terribly cheap looking handles. The steel seems reasonable (a little flimsier than the gourmet series if you ask me). I wish they had included the four star steak knives to make this a perfect set at the price. I would definately not have paid 400 bucks for this set (which it regularly sells for), but 219 is OK.
All in all, a good knives set but you will need to spend extra on steak knives ($100 for 8 gourmet series) and might try to ebay the banquet steak knives that came with this set.

I purchased this set at a bargain price of $218. I've used it for over a year and am pleased with my purchase. My knife skills are probably average, so I find it helpful to have a large set. I mostly use the large chef's knife. I've added to the set, finding Four Star paring knives at TJ Maxx and Tuesday Morning. I just bought a Chef's Choice electric sharpener and find that keeping my knives very sharp speeds me up in the kitchen and is helping me produce more uniform slicing results. The weight of the knives is heavy and the handles are skinny and smooth. The shaft runs through the length of the knife. The handles are two metal halves riveted together. The only drawback which is why I didn't give this unit full stars is that the canister only holds a little over a couple of whatever your cutting. I will be purchasing the 3 cups version soon. I believe they also have your crank or pull cord versions. This is well worth the price. I used it myself to chop up some hot peppers really fine me for the freezer. I also wish they had more colors to choose from.

This is the best cutting board I have ever owned. It's big which is what I was after. It's so comfortable to cut on (is that possible?).I use one side for cutting and the other for rolling out dough onto.The board is warped/not level.
