This is a nice little knife. It is very sharp right out of the box, something I've come to expect from Al Mar. I don't know what it's hardened too but this is very hard steel. I'm a little worried about chipping it but have not had an issue in three months use.I took off 1 star because I was unable to wash it right after use and it had to sit dirty overnight. It got several small spots of tarnish. Normally this would be my fault but I used a shun chefs knife on the same food and left that out too, it had no tarnish.
