Yoshihiro Cutlery Hammered Damascus Gyuto Knife, 7-InchThis is an exceptional knife for those looking for an introduction to fine Japanese knives. It is extremely sharp out of the box, although the combination of VG-10 steel and the hammered Damascus finish (VERY ATTRACTIVE) might make it a little harder to maintain and sharpen. Much sharper than the typical high end western knife like Henckels and Wusthof (and I am a big fan and owner of those brands). Profile is a bit flatter than the German knives, but is still very comfortable for a variety of cutting techniques. 7" is a bit shorter than most chef's knives, but if you have smaller hands, or like me a somewhat more constrained prep environment in your kitchen, the size is ideal. You will only notice the shorter length if using to carve or cut very large vegetables. This has become one of my go-to knives.

What a great knife! Im a professional chef, first japanese knife. I don't think I'll ever buy German steel again, espacially at this price!. This knife is as functional as it is beautifull. What a value.

Firstly, I don't usually write reviews, but I just had to for this item.

Very high quality blade that is sharper than any other knife I own.

Right out of the box it was very, very sharp. Did the paper test and it cuts better than my current kitchen knives. Slicing a tomato is effortless. Easier than a hot knife through butter! Use the best sharpening stones you can afford to ensure the blade remains sharp. "King" stones are good quality for the money from Japan. Do not use a steel sharpening rod, it is too harsh on this blade. Get a ceramic rod and or a strop (with or without polishing compound) to finish the sharpening of the knife.

Knife is smaller than a usually 8-9.5" western Chef Knife. However, it is a great size for all tasks with a good weight and nice hand to it. I did not notice any real difference while performing my normal tasks compared to my western Chef's knife.

The hammer damascus is gorgeous and much better than in the pictures. The handle is made of nice quality wood. I will likely be oiling the handle once a month to maintain it's luster.

I am a cabinetmaker and sometimes a Sous Chef for my wife, and I cook. I know a good product when I see one. I also know about sharpening since I spend a lot of time on my hand tools. My new Yoshihiro Damascus Japanese chef Knife Gyuto 8 is as good as it gets. I spent a lot of time sharpening some of my other knives after using them, only to have to sharpen them again the next time I needed them.

My new Yoshihiro knife stays sharp consistently and is comfortable to use.

I am not a knife pro, but I love to cook and several years ago decided to upgrade my knives. I started by getting a Shun 8 inch chef knife which I love. I still use the Shun all the time, but the Yoshihiro has become my go to knife. It is a bit more comfortably for me to use then the Shun, perhaps because it is an inch shorter and in general it just fits well in my hand. I have now had this knife for almost a year and use it several times a day. It is extremely sharp and stays so for a long time. Overall, a great buy!
