I lived in Italy for two years in the Friuli area, where Montasio is originally from. It is the BEST cheese ever!! It's slightly firm but still a little soft, almost like a soft Parmesan. I am so sad that I don't live there any more....this cheese was the best...And believe me, don't get any Montasio except if it is Montasio Friuliano.....The Friuliano means a lot..
