First off these utensils are way to big and clunky to the point if you have plates that are a standard size, it will look like a joke. Yes they are big and shiny but that's all you are getting for the money. The edges are rough and the pattern is indistinct. Good flatware has smooth rounded edges but this is not good flatware and the edges are rough. This item is cheap, big, and shiny and people will like that I guess and well it seems to be working. What more can I say. I wanted a "continental" style (larger, longer pieces), buy didn't like most of the patterns. I have colored dishes (not portmeiron) completely covered with flowers. These look great with it. The detail oon the handles is beautiful, good weight, very shiny. Bought for every day, but definitely usable with fine china.Don't be afraid if you don't have their dishes!

My blades began rusting a day after I used them. I've only had them since Christmas and am shopping for replacements as we speak.
Don't by these. Whoa...my sisters have this set at their house, which I used extensively last night to cut with. In a word? Terrible.
They have not used them much, and all they had for me was a glass cutting board (I know, terrible). Due to the glass cutting board, I knew these edges, had they been used, would not be terribly sharp.
I made a point of sharpening them on the included steel using the procedure outlined in the manual.
Anyhow, I found myself both struggling and TEARING vegetables when cutting them. To slice red pepper, I was having to pull the remaining portion of the pepper up to tear it off of the piece I *thought* I'd just cut.
Perhaps this is a terribly unfair comparison, as I am used to my Henckels Pro "S" set. But for crying out loud, I didn't think it would be THIS bad.
While I cannot speak for the rest of the Henckels "International" (meaning "Made in Spain, not Germany") line, this set was very much unacceptable. You would literally get a better value buying a Henckels 4-Star Chef's Knife instead of this WHOLE SET. At least you'd get some real use out of it.
The steak knives feel cheap. This is definitely a $60-feeling set, no great "value," in my opinion. I would never, ever, ever buy a Henckels International product after this interlude and will happily return home tonight to my Henkels Pro "S" set...where cutting through ANYTHING is like gliding through soft butter.

Henckel along with manufacturers of other cutlery, utensils, cookware and kitchen accessories always state whether or not you should wash them in a dishwasher. PLEASE pay attention to their instructions! Henckel manufactures a fine product. I always hand wash the knives -as they advise -then dry them immediately and store them safely. I don't want to discount others' reviews but those who have had problems with "rusting" have either not cared for the knives properly or have had a very rare low-quality product they should ask Henckel to replace.Not everything goes in the dishwasher. Just as with garments, read the label before you wash! :)

Prior to this set I had a cheap Chefmate set for maybe 20 or 30 dollars. After a year or two the handles started to detach, so I decided I needed to buy a better set. Trusting in Henckels name I bought this set. The knives are made in China. Regarding quality, the knives are still holding up great after almost 5 years of use. While it is really recommended to hand wash and dry your kitchen knives, I always put mine in the dishwasher instead. Maybe due to this after about 4 years they started to show some rustmarks, but this turned out to be no big deal. With the help of some "Barkeepers Friend" I was able to quickly and easily remove those marks again.The knives are "stamped knives", making them rather light in weight. The handles feel good and the set will look nice in your kitchen.
Regarding the material of the blade Henckel does not advertise them as a "carbon blade" but rather as a "stainless steel". I therefore strongly suspect that this is not a carbon steel blade.
After about 5 years despite being able to get rid of the rustmarks, the blades have become worn. Sending them for resharpening is not really worth it and buying a whetstone is almost as much as the set costs by itself. So after close to 5 years it haas come close to where the set needs replacement.
Really good knives that you want to use for 10 or 20 years should be "carbon steel", which can be made much sharper than stainless steel and also hold their edge longer. Still if you want a set that is able to handle your basic daily kitchen duties for the next 5 years and will not break in the process instead of a set for life, you will be perfectly happy. The next step up from this set are carbon steel knives, either stamped or forged, that can run you anywhere from $300 to $1000 for a good set, but those will also last you longer and give you a better cutting experience. For the money this is a great set I was very happy for the time owning it and I therefore recommend it.

The small chef knife I bring with me to work: It's a great little dicer! It's cheap enough so that I don't care if it gets damaged, but good enough that it'll stand up to rigorous prep work in a professional kitchen.
True, the handles are cheap hollow plastic and the blades are certainly not the sturdiest things in the world, but they are by no means "bad" knives.
You do have to be delicate to make them last (and the Ronco lifetime guarantee thing is a headache to try to deal with: you may as well not even fool yourself into thinking you'll get anywhere with that). Following a few simple rules will prolong their life:
-DO NOT put them through the dishwasher: This is a rule you'd follow even with GREAT knives. Even though they are dishwasher safe, even Ronco typed up a small blurb on the back of their packaging saying why and how it can damage the knives. The heat and chemicals in modern dishwashers can damage the appearance, edge, and potentially the handles (which are, as mentioned, cheap plastic)
-DO NOT let them sit in the sink (Which is another thing you would do even if these were GREAT knives): Aside from the obvious safety risk of leaving a knife in a murky, soapy sink full of dishes, the water (and any additives or minerals contained therein), detergent, food particulates, and abrasion/collision with other utensils and dishes can damage the blades and handles.
-HAND WASH IMMEDIATELY: Get a little soapy brush, scrub the knives, rinse them VERY well, wipe them dry, and let them air out a bit. Again, something you'd do with high quality knives.
-Don't be stupid with them. Don't cut soup cans, hammers, bricks, etc. like they do on the informercials. Don't use them as screwdrivers or pry-bars, because they're not. You wouldn't do that with a set of Shun knives, would you?
Basically, treat them like good knives and they'll rise to the occasion. Treat them like kitchen junk, and that's all they'll be. A little care and consciousness goes a long way with these.
If you want a magic knife set that you can abuse, this is not it. Buy a 20 dollar block set from Big Lots for that. It was pretty much as advertised. The small chef knife works well, also. It slices and chops things with very little effort. The third knife in the set, the paring knife, was not as good as the others. It makes a sound as if there is something loose inside the knife. This board rules. I have had it a few weeks now, and I am very pleased. It has VERY deep channels to keep juicy foods off your counter, and if you don't need the channels, just flip it over and use the other side there are no stupid non slip feet or mounting pieces that keep you from using both ends of the board. I purchased this set about a year and a half ago to replace an Oneida stainless steel flatware set. The price of the set has actually decreased by $25 since I purchased it. I use 8 of the 12 settings for everyday use and have kept 4 of the settings as replacements. Fortunately, I haven't had to use any of the replacements yet. The pieces are medium weight. They don't bend easily, but will buckle under significant pressure.This stainless steel flatware set is no comparison to real silverware, but for the stainless steel category, the Corsica is top of the line. The gold accents on the Corsica make the set very distinctive and add a bit of flair to the dining experience. The basket-weave design at the base and neck represent the hand woven nets and baskets that fishermen use to make a living. The Corsica set looks exactly like the Wallace Aegean Weave sterling silverware set that retails for around $12,000 for a 12 place setting. The Corsica set has all of the fine detailing of the Aegean Weave set at a fraction of the price.
While the description on the Amazon product summary for Corsica says to hand wash only, the website of Lifetime Sterling (direct seller of the Wallace brand) states the following about stainless steel flatware:
* When cleaning your stainless steel flatware in the dishwasher; make sure not to crowd the pieces in the baskets to ensure each piece gets thoroughly clean. Also, avoid the hot drying cycle.
* Keep stainless steel flatware in separate baskets in the dishwasher as direct contact can permanently damage the items.
* Keep detergent to a minimum, avoid lemon-scented detergents and avoid detergents containing chloride, which can damage your flatware.

I always wash these pieces in the dishwasher and actually use lemon-scented detergent. I have also accidentally left some flatware pieces in standing water for a day. Thankfully, none of the pieces have any stains or damage. The pieces of the previous Oneida set that I had would stain after just two hours when they were left in standing water.
I really like this set and the gold plating makes it looks very regal -even better than the sets used at fancy restaurants. Treat yourself with a very elegant, better than restaurant style experience when you eat at home! Every time you look at this set, you will remember the hard work that you do, just like the fishermen with the fish nets and baskets. You won't be sorry with the purchase of this set!

If you drop one do NOT try to catch it, and be careful cleaning as they'll happily shred sponges, cloths and dish brushes too.After doing a lot of research on the different types of steak knives, I decided to pay the extra $ and buy this set. Let me tell you...totally worth it! Yes, they aren't cheap but I can almost guarantee you that you'll never have to buy another set for a VERY long time. Just an FYI, never buy serated steak knives...completely defeats the purpose. They just shred up the meat as you cut into it. I tried these knives for the first time a few weeks ago. I made stuffed pork chops and these bad boys are so sharp and smooth I simply used one stroke when cutting through the pork chop and that was it! It was so easy!!!! No need to sit there and cut back and forth multiple times to cut through a piece of meat. I can't say anything bad about this product. Well, the only thing I could say that I'm a bit sad that when I opened up the package there wasn't the Zwilling JA Henckels logo on the side of the handle like there is on the image above. However, the base of the handle has a metal cap and the logo. I just would have liked to see the color logo and name on the side of the handle like it shows in the picture. Don't get me wrong, these are wonderfully sharp blades and they will last you a lifetime if you sharpen them correctly--for that they deserve a five star rating. But, the shape of the blades is a personal preference and should be taken into consideration before you make a life-long commitment.Maybe it won't matter to you if you're buying a good set of knives for the first time, but I have owned the classic shape for a long time and I like that shape better. The difference? On these blades, do you see how the blade curves down from the tip, then follows that curve for about two-thirds of the blade, then tapers in a bit? That's what I have a problem with--the little tapering in, then tapering back out to "meet" the hilt. On the classic shape the blade does not make that little inversion before finishing off.
Regarding Henckels and regarding the expense? You cannot go wrong with Henckels and it IS A VERY GOOD DECISION to go for the more expensive knives. If you are looking at less expensive blades, remember: "You don't get something for nothing" and "You get as good as you give"! Look at your budget and spend a little MORE than you think you should....I believe you'll be happier down the road.
It's always nice to actually hold a knife and get a feel for it before making it yours, but the return policy is so easy here that it's worth taking a chance.

While listed as a 7-inch blade, the Sekiryu Santoku knife actually has a 170mm stainless steel blade (6.75 in.). It uses a thinner, stamped blade stock (unlike the forged construction of more expensive knives). So it flexes a bit more, though not to an excessive degree, in part due to its limited length. Steel appears to be a decently tempered 420-series stainless steel, probably 420J. Its edge is thin, hard, and after a bit of sharpening very sharp. Instead of the flat ground blade profile (progressive taper from spine to edge) of most santoku designs, the Sekiryu Santoku's blade has a hollow machined section ground along its length on the lower third of the blade. It is a partial tang knife; the handle is of lightweight wood instead of heavier Ho wood, and it has a plastic bolster instead of horn, so its balance is a bit blade-heavy, and not at the rear of the blade as with most full-tang Santoku. This does not impair its general performance, and the symmetrical handle allows it to be used by both right and left-hand users (not always the case with traditional designs).
Once sharpened and honed to improve the factory edge, the Sekiryu Santoku still cuts and slices very well, much like a short slicing knife, probably due to its rather thin blade. While it takes a very sharp edge, the blade steel isn't terribly hard and so keeping the blade steeled and occasionally resharpened will be required, but then it doesn't cost $80, either. You will want to restrict it to lighter veggies, fish, and chicken it's definitely not for tasks like butchering thick cuts of meat or careless chopping on hard surfaces (always use a wood cutting board). Overall fit and finish are good and the knife has held up well after two years of use.
While it's certainly no Hattori, I would easily recommend this budget stamped-blade knife over some of the U.S.-brand name (but made in China) 'Santoku' copies. Sekiryu put its money where it needed to be in a budget knife in the steel and heat treatment instead of the looks.

I have a full set of Henkel 4-stars and also some of their very fine Twin-star knives, but this is an exceptional knife for a price of less than $20.00. It was delivered extremely sharp, and the integrated semisoft plastic grip is non-slip, which is very important from the standpoint of safety. In fact, I actually think it is a safer grip than the much more expensive Henkels if you are cutting something wet and messy, as raw meat always is. I would never put a sharp knife in my dishwasher, but this knife is very easy to clean in warm soapy water after using it to cut meat or poultry. I bought this knife because it was the top-rated boning knife in Cooks Illustrated, and as usual, their recommendations are very much on the money. This is my second Victorinox -the other being a 12" slicer, and both are made from excellent steel with good grips, and are highly stain resistant and easy to clean and sharpen.
I suggest if you are working with something (like poultry) that is very slick, you consider using a washeable kevlar or steel knit glove to grip the surface. This knife came as sharp as any I've ever purchased, and just touching the blade to your skin can cut your skin so finely you can't feel it, and who wants to get even organic poultry or meat drippings on an open wound?
If you are considering a wedding present for someone just starting out who doesn't have a lot of money but wants to work with quality tools, a Victorinox set is a great starter set of knives.This knife was a recommended item at America's Test Kitchen. The Bamboo Magnetic Bar works very well. It holds my knives and allows easy access. The strength of the magnets is a good balance between holding the knives and having to pry them off with a crow bar. The bamboo surface keeps my knives edges safe from nicks.
My only complaint is the way the magnets are placed in the bamboo block. There are some dead spots on the board. Annoying at first but I am used to it now. These dead spots suck the knife into a position that may not be optimal, with a little rearranging its works fine.
If the magnets were consistent across the board I would give it fiver starts.This is a beutiful product. However, beuty is only skin deep. The knifes will not stay straight on the bar. They turn into each other. Also the heavier knifes slide down so you have to put them on with the blade point down so the handles will prevent them from falling completely off. Very sharp looking. Pun absolutely intended.Only problem and this may be typical of these magnetic knife bars; i'm not sure is that the bamboo has five distinct magnetic points, and it is difficult to space the knives out properly; they all tend to bunch around the five spots.
Don't know if that makes any sense, but to put it another way, I only use it for five knives (one for each magnetic spot), even though it could easily accommodate more, in order to appease my obsessive compulsive sensibilities.

I was looking for a way to get my "most used" knives out of the drawer and readily accessible. But I also wanted to protect the edges, and to have them safely secured. I considered a block, but wasn't wild about losing counter space. I looked at other magnetic holders, but I was concerned about the chance of damage to the blade edges from striking the metal surface of most holders. When I saw this holder, I knew I had my answer. The bamboo not only looks attractive, it does a good job of preventing accidental damage to the blades. I had some concern that the covering would space the blade too far from the magnet to get good holding power, but that has not been a problem. I wish the price was a bit lower, but I still think this is a superior solution.UPDATE:
It is six months later, and I just ordered a second one of these for my kitchen. I have been very pleased with the one I have, but the recent addition of a cleaver and a second chef's knife has exceeded the capacity of my existing bar, so a second one was needed.
I'd like to respond briefly to those who are bothered by the magnetic cogging which causes knives to have a preferred location on the bar. I have my bar mounted at an angle on the side of a cabinet. In this configuration it works very well, And I have no problem using the full capacity of the bar. Currently my bar is holding an 8" chef's knife, a 12" granton slicer, a 10" all purpose blade, a tomato knife, a boning knife, and a paring knife. In the angled position this is the full capacity of the block, and the full width of the side of the cabinet. I will be adding the second bar above this one, doubling the capacity of that space. Clearly I find the cogging to be a minor nit, and remain satisfied after 6 months of daily use. As always, your mileage may vary.

It looks cool. My knives look cool on it.A couple problems though. It wont sit flush on my wall. No matter how much I try to play around with the hardware it still rocks when removing a knife.
Also there are only 5 magnets. So you cannot put any more pieces on it than that.
But its a pretty good price, and the magnets are strong enough, even for a pair of heavy shears. It works well in my studio so I dont have to take up valuable counter space with a knife block.
