But it works, and it works better than any other knife on all kinds of cheese (except cottage cheese).

You need less than half the downward pressure that a normal knife requires, so it's good for people with arthritis or for kids.

It would be hard to cut yourself with it.

It leaves both the cheese slice and the remaining block edges smooth.

Cheese will not stick to the blade (except cottage cheese).

And it is dishwasher safe we've had ours for over a year, and it goes into the dishwasher almost daily.

It doesn't look like much, but it sure does work.

I have to admit I was disappointed in the way it looks. The blade is white plastic and has an "inexpensive" look to it. However...it is amazing to use on all cheeses from room temperature brie to parmesan reggiano straight from the refrigerator. It cuts much easier than a normal metal knife as it has very little drag as it cuts. It leaves the remaining cheese looking intact, not crumbled or misshapen. The "magic" is the shape of the blade's sides, definitely not in the keenness of the blade. It won't cut a carrot and it would be really hard to cut yourself, but cheese? Fantastico!

Believe it or not but this bizarre little plastic (Yes, I said Plastic) kitchen tool will be the best cheese knife you'll ever use. It cuts and cuts and cuts and never gums up! Never! It even cuts gooey brownies without sticking. Doesn't look like much but it is hidden treasure!

I first came across it hanging with the usual suspects in a Gourmet kitchen tool display featuring traditional cheese knives. It looked flimsy so I passed on it. Then I saw it again in a friend's kitchen and decided to give it a go. I was HOOKED. I tried it on everything including freshly made fudge, and it worked like a charm. Bonus: it can be used in Teflon cake pans, no scratching.

What makes it more successful than the usual cheese knife? You can't see it in the picture, but the blade design is a series of V shapes that sweep the cheese away from the blade surface and allow air to lodge between the blade and the cheese so that only the cutting edge touches the cheese as you press the knife through.

Is it flimsy? No, but you can't go cutting down trees with it. I don't know what it's made of; the promos call it a space-age material. It feels light and smooth and flexes yet it doesn't bend or buckle when pressing through soft and medium cheese. (I don't need it for rock-hard cheese) The handle is comfortable and graspable.

It looks so small, how can it be of much use? True, the blade is only four inches long but because of its cutting prowess it can handle most store sized cheeses. There is a longer version available and I've heard good things about it, but I've had the small one more than four years and it's been plenty.

What should I worry about? Treat it with care. It looks harmless so it's easy to forget it is a KNIFE. The cutting edge is very sharp and should be kept away from fingertips and children. (I managed to sharpen it on a carbide cutter) Keep it away from heat and store it in its sheath or hang it up.

Finally, this is one of those kitchen tools you'll find more and more uses for as you encounter problems to solve. Everyone I have turned on to it loves the thing. It isn't in many stores yet, so keep a lookout if you're a tire kicker who won't buy on-line.

When I first opened the package I was surprised to discover this knife is plastic?

Do not let the product material dissuade you. This knife cuts through different types of cheeses with precision.

What is unique is that there is no danger in accidentally cutting yourself instead of cheese. Most handy when copious amounts of wine is involved with the cheese slicing.

The cheese does not stick on the side of the blade and you can cut very thin slices with little effort.

Also, this knife is very attractive in appearance when having guests participate in making their own cheese selection.

I recommend this cheese knife for the kitchen and entertaining.
