I bought this knife for breaking down chicken and game because the thought of nicking my Shun on bone made me ill. Nice and sharp out of the box, managed to lay my pinky open while taking some silver skin off a pork loin. Makes short work of chickens and other bone-in cuts but requires regular attention from the steel. I steel the blade before every use, and while it cuts OK it's not like it was out of the box.Save 31% Off
