Victorinox Swiss Army Fillet Knife with Pouch

With Costco here in Seattle currently selling twitchy-fresh Alaskan Sockeye fillets for $9/lb and whole fish for $5/lb, this Scotsman decided he needed a long filleting knife. At the knife shop, the best one I was shown was this Global, but I couldn't bring myself to spend that much, and I dislike the Global handles, especially when wet as would happen while filleting.

So instead, for chump change I got this excellent knife with a far superior handle. A short detour to Youtube for salmon filleting videos (recommended: the hilariously-unhygienic one that has chickens wandering all over the filleting table) and I was in production, with the freezer and the stockpot quickly filling up. I figure that with the Global's extra flexibility, I could get about 5% more meat off the bones, but none of it is going to waste, so I don't mind. A shorter knife wouldn't work nearly as well.

Next up: the same store is selling whole NZ lamb for $3/lb...

(Note: Every decent cookbook I've ever read says salmon carcasses make dreadful fumet. That's simply not true: salmon fumet is an excellent base for robust dishes like a Malaysian rendang made with unsubtle fish like mackerel or blues.)

A very well balanced blade. Though it hasn't been officially tested under fire, from experience the handle aught to offer a good grip even when the hands get gooie with fish slime. Lets go fishing.
