The factory edge left some to be desired. After a few hours of grinding and honing I was able to get a razor edge that holds up. VG-10 is hard steel but can be worked with. I used a "Lansky" system that keeps the stones at a constant angle. I had to use 20 degrees because that was how the blade came. Had I lowered to 17 degrees it would have taken much longer. This is good Japanese steel but the knife was built in Taiwan. The blade pattern is good, allowing clearance for one's fingers and the knife has a comfortable grip for long term slicing and chopping. The extra width makes it a scoop as well. Once I got this blade tuned in, I now like it a lot. Beware I got this as a gift and it worked beautifully for three months. Only sponge cleaning, no bones (we rarely even eat meat). Then, after cutting some fresh brussel sprouts, a section of the blade edge broke off!
