Togiharu Molybdenum Petty 5.9' 15cmLooking for a thin compromise between a 4" paring knife and a full-size santoku or gyutou, I ordered the Togiharu Moly petty. It is a truly beautiful knife. It is shaped like a gyutou so it can pierce effeiciently but it is narrower from edge to spine. The thickness of the blade is very thin as well. Overall, the petty is super light.

My wife has small hands and is uncomfortable with larger blades. This was nearly the perfect knife for her to do cutting chores easily without becoming nervous about a large edge.

The steel holds and edge very well and is truly stainless. It is quite easy to maintain. I find myself reaching for this knife, sometimes in place of paring knives, sometimes in place of a gyutou. It's a truly versitile knife and buying from Korin is a pleasure.

I would encourage the reader to consider buying a modern Japanese knife (actually made in Japan) instead of a European (like a French chef's blade) styled knife. Japanese blades are thinner and slice like pros in comparison to the heavier, generally wider, Euros.
