Togiharu Molybdenum GyutouI bought this knife on the recommendation of world class chefs. I just tried it out, first slicing ripe tomatoes and then a grilled flank steak. All I can say is that it is the sharpest knife I have ever used. It glided through the tomatoes, making paper thin slices with ease. The flank steak, a fairly tough cut, was just as easy to slice. The knife is very light and pleasant to hold. After one evening, I think that it is great. I bought the saya wooden cover (which was not included) to protect it.
