Edge 2001 Knife

I have had a pair of these knives for at least 10 years and maybe longer. They are my favorite knife. My son and his family were visiting and one got broken, I was so bummed. But I found them on Amazon and bought two more. These knives cut everything. They are still my favorite.

I have had one of these knives for years now and the handle came loose therefore this is a replacement. I have a far more expense name brand knife set, but this one is my favorite. It is used daily in my kitchen

The edge 2001, of which I have 3, is better for slicing than any knife I have ever owned. You can cut tomatoes, onions and blocks of cheese easily and as thin as paper if you wish. The blade itself seems almost indestructible as I have use an old one to cut stuff like wood and cans. The only caution I have for people is that the handle eventually loosens its grip on the blade if the knife is used frequently on hard-to-cut items like very hard cheese etc. Once it loosens, the fun is over as the blade can eventually work its way out of the handle. When this has happened, I have tried the best glues I can find to re-seat it, but it continues to loosen again. So I suggest not to wash the knife in a dishwasher and be careful not to cut items that require very hard downward pushing. But I still love the knife or I would not have purchased so many just so I know I have an extra one handy when one is dirty and a spare when the blade starts to slip a bit in the handle.

I used to hate to buy fresh whole pineapples because it was such a struggle with my old knifes to slice the pineapple and get rid of the touch skin. Not with this knife! Once I ordered this knife, I bought a giant pineapple to see how this one handles the task. Unbelievably easy! I sliced the pineapple and sliced off the skin as if I was cutting tofu! It was so sharp I almost sliced my finger tip (Be aware! Keep it away from kids!) Pro: the sharpest knife I ever had at an amazingly low price! Con: So sharp that I have to warn everyone in the household to be careful with it!

By far this is the sharpest knife in the drawer. This is my second edge 2001,I loved the first one until the handle broke which was 11 years later. This is the knife I use for all my fileting, this knife has a super sharp cutting edge and just glides through everything. Be aware of the sharp edge though,I've sliced my finger quite a few times, more operator error than the knives fault. I hope they don't ever discontinue this product, I would definitely purchase this knife again.
