This knife is the best. I was given one 20 years ago, and I have just bought our third they do not wear out, they just seem to disappear. Anyway, the blade is carbon steel, which makes for a little more care than your might have to give a stainless steel knife, but it holds an edge and is so far superior to a stainless blade that it is worth the minimal care it needs (just dry it after you wash it or you'll get rust spots, but they come off with a swipe of a scrubby, so no worries). So buy one or two, and you will find it to be the perfect size for most kitchen tasks. It being made in the USA, and inexpensive to boot, are major pluses.
