Wusthof Culinar 8-Inch Carving Knife
The Wusthof Culinar line is an all stainless steel look, rather than a black handle. Although the picture and some descriptions want you to think this is a single piece knife, be advised that the hand is a separate piece of stainless steel molded onto the tang. I personally prefer the handle of the Grand Prix and Classic, because the grip is surer for me, but this is, to some extent, a matter of personal preference. This series "looks" more professional to some (like a Viking stove).
This particular model, the 8 inch carving knife, is a good knife, but I find its uses to be few. For chopping, the chef's knife or utility knife are more useful. This knife is too long and thin for chopping; its balance isn't right. Therefore, this knife is really limited to carving meats. For most cooks, this is an expensive knife for a rare job. If you are completing your collection, I recommend this knife. If you are starting a collection and looking for an all-purpose knife, I would recommend the 8 inch chef's knife or the 4 ½ inch utility knife.

This is a pretty serious knife with good looks, proper balance, and a design that just feels right when you use it. Part of the appeal was that this series has some nice cheese knives, however, they are very hard to track down and you probably won't get a good deal on them. I'm a little disappointed that Schmidt Bros. don't carry full stock of their own knives (as of this post).The teak had a dull rustic look when I got it instead of that orange glow they show in all their photographs. Keep in mind, wood is a living thing and you will want to oil the handle every so often when it starts looking thirsty. In most cases, this results in a darker looking handle.

I ordered this knife, and a 6" Chef's knife to try, before replacing our aging and worn knives. My first surprise, was the full tang, keeping you hand and fingers away from harm. The second, the knife took a wonderful edge, and holds that edge. The slight rocker of the blade makes dicing a charm. Yes, it's very heavy, but I don't see that as a negative. I was looking for a substantial one. I just bring my pans to the board to unload the food. I would not bother trying to carry the board across the kitchen. It doesn't move on your counter even remotely and it looks beautiful.
Make sure you season this board with mineral oil and paraffin before use so it doesn't absorb any odors or bacteria. Here's how I do it:
In a double broiler (or a bowl over a pot of boiling water), melt 10 tablespoons of mineral oil and about 3T of paraffin (comes in a block at the grocery store) until the paraffin is completely melted. Don't melt it directly over heat, as the paraffin has the potential of being flammable.
Immediately after you remove it from the heat, pour 1/2 on the cutting board and quickly--in the direction of the grain and in long strokes--rub it in with a lint-free cloth. I put 3 thin coats on mine and water beads like a freshly waxed car :). Let it stand overnight and buff with a soft cloth and you're good to go.
I tried doing strictly mineral oil and I ended up having to remove the feet, drill holes and attach the feet to the opposite side for use due to the odors that I couldn't get rid of on the side I was using. I would strongly suggest using paraffin; it's wonderful and won't hurt you.I love this board! I coveted my father's for years before finally taking the plunge and buying my own. It is a great height, adding just the right amount for comfortable cutting. I did remove the feet and just put the small plastic counter savers back on. I found that inch made a world of difference (I am just 5'5").
In time, the cutting board starts to show cuts and nicks and slices in the wood. The more it is used, the more rustic and pleasing it is to the eye. I am so glad I bought this!

Recently moved out on my own and started to buy my own things for my apartment and soon realized that plastic cutting boards are not the best option. I decided to search on amazon and came across the Catskill 15.5 inch Round slab (Catskill Craftsmen Wood End Grain Round Cutting Slab with Feet) but I thought it was too big and pricey for me so I kept searching and I found this gem. Not only is it cheaper, it is only 1.5 inches smaller in diameter and only 1/4 inch smaller in the thickness so I purchased this based on the good reviews of the 15.5 inch slab. Same brand, same quality! The difference in size versus the amount of money saved is definitely a plus! Get this one!I am really pleased with this cutting board. The feet really grabs onto the counter top and doesn't move while I'm chopping away; it's perfect for chopping up vegetables and what-not. It looks great in my kitchen, I leave it out on the counter top as if its a decorative piece haha. I followed the recommendation given by another reviewer on the 15.5 Catskill slab. I used the paraffin wax and mineral oil mixture to treat the board before use and will continue everyday for the first week, then once a month, and then whenever needed :)
Highly recommend this cutting board, I love it!I had been looking for this kind of chopping block for over 3 years! It looks great in my new kitchen; it doesn't move around when my hands are full; it is a far cry from the flimsy chopping surfaces that seem to be everywhere. I would highly recommend this product. I had originally planned to buy a Shun knife but when I tried it out in a store it felt too big, heavy, and awkward in my hand. (I am 5 feet tall and have relatively small, but strong hands). The Wusthof fits me just perfectly. I've been using both knives for a couple of months now and find that they do a great job without stressing my hands or wrists. I mostly use them for fruits and veggies. I strongly recommend that if you are new to quality knives you should go to a store and handle a bunch to see what feels most comfortable in your hand then buy it on Amazon where the price can't be beat, especially with free shipping. We bought the "poultry shears" offered by our local big box store and the first time we used them to butterfly a turkey, SNAP! They broke. These shears came highly recommended by my favorite recipe blogger and I couldn't be happier with their performance. They replaced a pair of Henkel shears I've had for several years that I paid three times more for but just weren't that sharp, even the day I bought them. While you're supposed to be able to cut through chicken bones with most Chef Knives, I wouldn't dream of using my best knives on such as task as the nicks and dings on the blade that results, just aren't worth it . . .and the task is made so much easier with these.The soft, easy grip handle is very comfortable, though it's important to keep the hand in the grips from touching the chicken to avoid the handle becoming to slippery. The blades easily separate for cleaning and snap back together and have a closing pin on the handle to keep them closed for storage.
Aside from cutting chicken . . .they work great trimming artichokes as well. I'm very pleased with my purchase.

Architec The Gripper Bamboo Cutting Board, 11 by 14-Inch
The boards do come a little fuzzy at first, but after a bit of use and washing, they become very strong. As is with most lower end boards, cut marks do become visible, but those will eventually wear away as the outer finish of the board grows more weathered. This is nothing bad.
The best selling point about these boards are the rubber feet. While they do take away an entire side of a board to use for cooking, they provide a vital role in keeping the board still while you're dicing (these boards are light and would probably slide around otherwise without the feet; I've had bad experience with other boards sliding around) and also helps air the board while it dries, keeping the bamboo off the ground and letting the water soak in and promote bacterial growth.
My only qualms about this board are the lightness of the bamboo. My own boards are very dark in color, giving them a very rich quality. These boards are VERY light in color, so if you really like matching your cookware, make sure that you have a brighter kitchen, or you may begin thinking these are a bit of an eye-sore.

Architec The Gripper 10-by-14-Inch Bamboo Cutting Boardi have used the cutting board now for about a month and am impressed with how nice it is to have 'grippers' on the bottom. the board does not wander on the counter and both the board and counter are easier to keep clean. at first i used it only for buttering toast and as a hot board as it is very attractive but i have now diced and sliced on it so it will [hopefully] have a long and useful life. very nice product. **** 4 stars

However, I was very pleased with this set. The handles are attached very well; I don't think they will ever come off. The blades are nice and sharp, and although I bought it mainly for the utility knife, I'm finding I'm using the others just as much. The bird's beak parer works great for cutting cheese. The other is great for cutting small vegetables, such as mushrooms. The one disadvantage I did find is it's not so great at cutting meat, and I have to be very careful so the blade doesn't slip and get me. Fortunately, I don't cut meat very often, and when I do, I can cut it when it's still a little frozen and easier to slice.
It does a great job of cutting pizza. Since it is just me and the cat, I can save money by buying regular size pizzas, cut off a couple of slices, and stick the rest back in the freezer for another meal. This allows me to stretch the cost of a good quality frozen pizza over three or four meals.
Forschner 12" Cimeter Knife
I am really surprised that no one has reviewed this knife yet, as popular as it is with the barbequing cognoscenti. I was first made aware of the knife when the webmaster of the Virtual Weber Bullet website, a site dedicated to barbequing, gave one away in the annual giveaway.
This knife is invaluable for breaking down these large cuts of meat and trimming the large caps of fat. It will cut right through cartilage as when breaking down a rack of spare ribs into a St. Louis cut. In fact, I think I cut through some actual bone this evening with it.
I received this as a Christmas gift, and upon opening, my brother commented that it must be too big to be useful. That is not at all true. The length allows long, smooth slicing, and the curved edge really allows you to get down into veins of fats almost surgically.
Although not as ideal as using a proper slicer such as Victorinox 12-Inch Granton Edge Slicing Knife with Fibrox Handle or Wusthof Classic 10-Inch Hollow-Ground Super Slicer, in the absence of a slicer, the Cimeter does a pretty good job separated ribs and slicing brisket.
I love my small collection of Wüsthof Classic knives, (which doesn't seem to have a Cimeter like this) but they seem to have become much more expensive than they even were a few years ago, so I am thinking about adding the much more afforable Victorinox slicer to my knife collection.
Shop around, though. I don't often find items at local stores for lower than the Amazon price, but I did find this knife at 3/4 the Amazon price at the time at a local restaurant supply store. As I write this in May, the Amazon price has come down since Christmas, but is still a couple bucks higher than in the store.
This knife is easy to maintain, as the fibrox (plastic) handle does not require the babying that the wood handles on my Wüsthof Classics require. I suppose it will be fine in the dishwasher (although I always hand wash mine.) The edge has stayed straight despite hacking through bone and cartilage with it. The price makes this knife and outstanding value.My customer uses this in his grocery to cut ribeye steaks from the rack o ribs with one stroke.
