Forschner 12' Cimeter Knife - Black HandleAnd by "barbeque," I don't mean grilling, but low and slow cooking of large, tough pieces of meat, mainly brisket, pork butts or ribs.

I am really surprised that no one has reviewed this knife yet, as popular as it is with the barbequing cognoscenti. I was first made aware of the knife when the webmaster of the Virtual Weber Bullet website, a site dedicated to barbequing, gave one away in the annual giveaway.

This knife is invaluable for breaking down these large cuts of meat and trimming the large caps of fat. It will cut right through cartilage as when breaking down a rack of spare ribs into a St. Louis cut. In fact, I think I cut through some actual bone this evening with it.

I received this as a Christmas gift, and upon opening, my brother commented that it must be too big to be useful. That is not at all true. The length allows long, smooth slicing, and the curved edge really allows you to get down into veins of fats almost surgically.

Although not as ideal as using a proper slicer such as Victorinox 12-Inch Granton Edge Slicing Knife with Fibrox Handle or Wusthof Classic 10-Inch Hollow-Ground Super Slicer, in the absence of a slicer, the Cimeter does a pretty good job separated ribs and slicing brisket.

I love my small collection of Wüsthof Classic knives, (which doesn't seem to have a Cimeter like this) but they seem to have become much more expensive than they even were a few years ago, so I am thinking about adding the much more afforable Victorinox slicer to my knife collection.

Shop around, though. I don't often find items at local stores for lower than the Amazon price, but I did find this knife at 3/4 the Amazon price at the time at a local restaurant supply store. As I write this in May, the Amazon price has come down since Christmas, but is still a couple bucks higher than in the store.

This knife is easy to maintain, as the fibrox (plastic) handle does not require the babying that the wood handles on my Wüsthof Classics require. I suppose it will be fine in the dishwasher (although I always hand wash mine.) The edge has stayed straight despite hacking through bone and cartilage with it. The price makes this knife and outstanding value.

My customer uses this in his grocery to cut ribeye steaks from the rack o ribs with one stroke. Plastic handle is safe from bacteria as required by law. This is a great tool. JIM S. dba KNIVES N STUFF
