Very sharp. Easily the sharpest knife I have ever bought. So sharp you can chop w/ it very easily just using your hand in an up and down motion w/ just wrist action. There is also enough curve to the blade to use it in a traditional rocking motion as you would w/ a chef's knife. The weight is wonderful.

After having bought this usuba knife, I will gradually replace all my knives with Yoshihiro brand knives. I really can't emphasize how great this knife is. It arrived very sharp (and with fast delivery) and after a few runs on my waterstones, it was literally as sharp as a razor. I took it against the top of my arm and it took off every hair the same way a store bought shaving razor would. My Shuns and Miyabis can do the same after sharpening, but they don't maintain that edge for nearly as long as the Yoshihiro blade. The design, shape, and build of this Yoshihiro also makes it much easier knife to sharpen than the Miyabis I have (7000 Pro series). You can tell it was built for someone who would be sharpening it by hand. Just looking at it side by side with the Shuns and Miyabi, you can tell its a vastly superior knife. AND ITS IN THE SAME PRICE RANGE!
I was slightly hesitant to buy a shiroko knife because I was worried about rust stains, but it hasn't been an issue at all. I just dry it off immediately after washing and its been in perfect condition.
So like I said, its the best knife I've ever had and I will soon replace my whole set with Yoshihiro.
P.S. You know that thing sushi chefs do with a daikon where they rotate it against the blade and turn into into one translucent sheet? I've tried that before with my other knives and it wasn't very easy and my product wasn't all that clean. I did it with this usuba and came out with some very professional looking results. It something that obviously needs practice, but you need a knife like this in order to make similar delicate cuts.

The only reason for the four-star rating is because one of my steak knives broke it's handle while I was cutting cheese. I have had no other problems with this set, so I am assuming that was just a single defective knife. The only other "complaint" is that none of the spoons short of the ladle have any real concavity to them and are pretty much useless for serving.
For the price, this is a great set of essentials for a simple kitchenIf I could give this knife set zero stars, I would. The way these knives are sharpened, the blade is only angled on one side, this makes cutting extremely tedious. All knives are serrated, so no chopping. Also, the spatula melted the very first time I ever used it, and all of the other items are warped from using them for normal cooking duties. This set it complete garbage, save your money.

I bought this set two days ago and it is a piece of junk. The knives are all serrated, and therefore terrible for chopping. The biggest knife already has rust spots forming.It looks nice on the counter and the swivel action is handy, however that's where my compliments end. Save yourself a few bucks and just use your butter knives to chop food, they will cut easier and wont rust as fast.
College students don't be fooled by this "all in one" set. Buy something else. I mean rusting....what the heck,

i received the initial order and the deep pot was rusted, Amazon sent a replacement set in an expeditious manner, however when that replacement order arrived the same pot in the set had a hole in it from being spot welded at the factory.The QC on the supply side is not very good and evidently the stainless steel is of poor quality it it rusts.

I have a small apartment on the bottom floor of an older building. There is no vent to the outside over the stove, which is gas, so I don't use the stove. Everytime I tried the CO2 detector would go off and when its cold outside its just not practical to leave the doors open and a fan blowing. So I bought some of those counter top induction cooking plates. The pans that come with it are nice but not very varied so I've been looking for more sizes to cook with. These looked like everything I would need and was assured they would work with induction cook tops. THESE DO NOT WORK.I broke down and bought an electric hot plate thinking when I "really" needed to use these pots I could break it out. When I went to boil some water in the largest pot these are constructed so thin the top part of the pot never would get hot enough to boil the water. The base was hot but you could actually touch the top part of the pot. The hot plate was cycling on and off as it had reached max temp but the top of the pot was not very hot. The material is very thin and will not properly retain heat to cook well.
To add insult to injury. The first time I washed the pot it formed little rust spots. Stainless steel my a$$. These cheap sucky things are worthless and its too late to return them as I tried to do the right thing and make them work. As someone new to cooking I've learned my lesson of what to look for when buying cooking utensils and these are not it.

Then I saw an online ad for the Chikara series and when I had a few spare bucks I bought the santoku from the full set with the bamboo cutting board. Let me get the board out of the way, it is very nice but considering it has grooves for carving, it is a tad small. On the other hand, it's very portable and safely houses the knife, making it good for picnics and such.
The knife, on the other hand, is fabulous. It's well balanced and feels very natural in my hand...which is saying something since I have carpel tunnel syndrome...and the blade is truly razor sharp. Went through a package of bacon (with the plastic on) like nothing. Onions fell into dice at the mere glance of the blade. And some how the Ginsu brand has made me comfortable in a way none of the others did.
I am still not sure if I'll buy the full set. I have PLENTY of knives, after all. However, if you are in the market for a set of handsome, functional, and well-priced knives I recommend the Chikara series. Also, think about these the next time you are shopping for wedding or graduation presents.The knife is not the all time best knife ever designed or manufactured; but, it is a very good knife for the above average home cook. The cutting board on the other hand fell apart even though I only hand washed it and immediately dried it off. Specifically, the knife storage pocket separated from the cutting board. I reattached it using waterproof Gorilla Glue and it is somewhat doing the trick. The down side of this repair is that the cutting board does not lay completely flat any more. I should have used a clam press instead of a joining clamp to hold the two pieces together while the glue was setting up. Now I have a cutting board that sits off balance about 1/64 of an inch so it makes an annoying wobble during use. I have somewhat got past this by setting the cutting board on a rubberized foam mat that keeps it from wobbling. Overall I would still recommend it because the knife keeps a pretty good edge and it was very inexpensive. I have only had to use a stone three times since I bought it. Between stone sharpenings I use a steel to keep the edge maintained.

Typically the name Ginsu conjures up images of "As Seen on TV" products and and cheap quality material. But based on Consumers Reports and on Amazon reviews I thought I would give it a try. My wife says it works great for chopping and has a very sharp edge. I haven't had it long enough to know how well it will hold the edge but for now it is a quality kitchen knife at a very affordable price. As for the cutting board, I agree with one of the other reviews in that putting the sticky label on the top wasn't very smart as the glue doesn't come off very easily. Also, there is a crack along the seam where the blade fits into the board and I suspect in time it will separate from the cutting portion of the board all together. But since I bought the knife for the blade quality, I'm not too upset with the quality of the board.Very pleased with this knife and cutting board. Stays sharp and easy to use. In fact, I had the 45 blade model and never really felt that it could be cleaned properly. The blades are 'stacked' next to each other in three rows. This smaller model has less blades, but it is a single row, and easier to get at. While it may sound like the more blades the better, it really doesn't take much longer to use this model. That, and it's half the price of the 45 blade unit.This product performs exactly as advertised. Basically you place uncooked meat on a cutting board, put the Jaccard on top of the meat and press down. The little blades come down and go through the meat. This version of the Jaccard can prepare a large piece of meat for marination in seconds. I have found that the more holes you make the better and faster the marination process goes. I have used this with pork, chicken and beef with excellent results.

I bought this for occasional use. I don't do many steaks or other meats that require treatment, but I wanted it around for when I do. I selected one with a single row of knives as (1) easier to clean, and (2) smaller and simpler. The knives are very sharp. The first time a used it on a one-inch thick piece of meat, I had to check to make sure it was doing anything. I felt no resistance at all. So, while the single row of knives requires more strokes, there's little effort required.The single row of knives was easy to clean. It would probably be best not to let meat particles dry between the knives. My only reservation is that the two molded plastic halves of the body don't quite fit together. There is a tiny gap at one top corner. That could, of course catch some water, but it's not a big deal. Except for that, it works well and satisfied.

Bought this gadget recently, where I first used it on a nice piece of London broil. I made many passes through the meat, and then I marinaded it with a marinade sauce for a couple of hours. Then I put it on my barbeque and cooked it like a regular steak. When the London broil was done, it tasted like a good sirloin. I'm quite impressed with it.What is even more impressive, is that the juices remained in the steak in spite of all the piercings it went through.

No chemical taste, no extra salt, and very easy to clean, provided I do it right away (having read the reviews before I bought it, I just wash it immediately after use, as others have said it was difficult to clean if they let sit until they got around to it no dishwasher here, as we live in an area where water is hard, and softening water wastes a LOT of water... besides, I think handwashing gets things cleaner (at least visibly?)

The construction is durable, with the heft of solid maple giving a feel of quality as well as real beauty. Once we got a coat of mineral oil on it, the grain came alive and was even more beautiful. The stainless steel is sturdy and polished to a mirror finish with no sharp edges at all. They guide the knife nicely and you don't end up with any plastic shavings in your bread that so often accompanied our previous products. The cut is straight, although a long knife is required as with any other slicer. Its function is rivaled only with its aesthetic quality. We always felt the plastic cutting guides looked so cheap and cheesy that we had to hide them in the cupboard. We leave this one counter with pride.
This slicer is the best thing since...well...home-baked bread.Craftsmanship: I will make an effort to steer guests past the point on my counter where this device resides right next to the Kitchen Aid Pro 600 where I make my bread! It's just beautifully made, period. My kids will fight over this one after I die.
Delivery: Amazing! ONE HOUR after I put in the order, I got another email from Amazon saying the product had been shipped. The slicer arrived THE NEXT DAY! Ha! Just found out I live about 20 miles from the factory. Way to go, Bread Slicer Depot. You can find them on the Web and they have an Amazon storefront.
Cost: It is a bit expensive, but not much more than you'd pay for a good dinner out with the spouse. I seriously doubt that anyone even having access to a good machine shop could turn out a product this classy for less money.
Summary: If you're tired of having wavy bread, now thicker at the bottom, now thinner, this is what you need. It's easy to use and easy to keep clean. I am using an 8-inch bread knife with it, but a 10+ inch would probably be a bit easier.
One previous reviewer mentioned treating the maple wood slicer with olive oil. Please don't! Olive oil is *food* and can attract insects, go sour and grow nasty things. Do as they say in the directions and treat the base with *mineral* oil to keep it clean and bring out the wood grain. Mineral oil is non-organic and doesn't attract unintended consequences.After reading all the glowing reviews about this product, my husband and I thought we'd go for the gusto and get the expensive bread slicer and not waste time and money on the inexpensive models. Well, unfortunately, we wasted time and money on this bread slicer. I have to admit, it is made very well, of good quality and craftsmanship. But, you still have to "eyeball" carefully where to place the bread through the loop in order to get an even slice of bread. If the bread is place askew in any way, then you are going to get an uneven slice of bread. The slicer does NOT hold the bread loaf in place, nor does it give you any guidelines on where to place the loaf in order to get a good cut. It also does not hold it still while you're cutting. It was really no better than slicing it myself without any guide at all. I'm very frustrated and would really like to find a bread slicer that does the trick and takes all the guess work out of slicing homemade bread. Way too expensive for the result it provides. Plus, you have to pay to ship it back and it's large and heavy! Awful return policy. Very disappointed!

The product does exactly what the description says and is beautifully designed/constructed. Holds either my panini or regular long bread knife well. Slices straight, any thickness desired. These were my requirements. HOWEVER, I saw the notice about you "can" oil the wood before you first use it. No "can" about it the instructions that come with it tell you to oil it over and over and over. In fact 4-6 times before the first use, they say. For $60, it should have come already ready for use! I guess if I were a woodworker, I would have known this. But living in Florida, with everything tile, glass or ceramic, wood is not a product that appears as anything other than picture frames and legs on chairs. The product's description should say something such as "once you prep the wood with oil..."
