Out of the box: Very sharp (yes, it will shave armhair and glide through paper). Fit and finish issues around the handle, particularly behind the bolster and along the handle. Pretty much where the handle meets the tang. This in no way affects its performance.
This is a cladded stainless knife with a VG-10 core sandwiched between softer stainless. Sharpens easily and holds its edge well. If you prefer a lighter knife, this one may not be for you as the handle is a little hefty. I have handled the Tojiro DP 240mm wa-gyuto (same knife, Japanese-style handle, ho wood and plastic ferrule I think...) and it is much lighter. Despite the longer handle, I feel a pinch grip is more comfortable with the wa-gyuto. The 240mm length is nice to have, especially when tackling multiple heads of lettuce, cabbage, or hakusai (nappa, chinese cabbage, whatever you wanna call it). If you plan on using this knife at home or in a cramped kitchen, you may want to consider a 210mm. Personally, I'd go with the 240mm and then buy another knife or two for other specific tasks rather than rely on one knife for everything.
All in all, I'm very satisfied with the knife. When it comes to Japanese knives, it's nothing fancy but you get what you pay for. What you're paying for is a no-nonsense, hell of a deal that is suitable for professional use. If you're avid about maintaining your own knives, doing so with this blade should be a breeze.

I am a rather large fan of this knife. For those of you who like to cut things like you can't believe, this knife will knock your socks off and then slice them in half! You will have to put on new socks because of this knife!On a more serious note, this knife style is essentially a Japanese interpretation of a western chef's knife. It's not exactly the same shape (otherwise it would simply be a western chef's knife), but it's close. Other than that, it's Japanese through and through. The blade is narrower and the metal is harder. It can take and keep an edge so sharp it can cut through even the strongest of excuses for your poor behavior.
Compared to fancier Japanese and German knives, it might not be as smokin' hot & sexy in the looks department, but that's because it's too busy being a superior knife.
Also, this bad boy rusts, which forces you to take care of it.This knife is perfect for either the professional or the home cook. I received this yesterday and could not be more satisfied. I sharpened all of my kitchen, hunting, and pocket knifes within a couple of hours. This would have taken days with stones. It does have a learning curve so start with an old knife and follow the directions. If you buy one and it doesn't work, then you are not doing it correctly. It took me a few times to get it right but now I can get them razor sharp. I have a bandage on my finger to prove it.I would have given it 5 stars but it does not work well with thick hunting knives (I have two Buck knives) because the slot is barely wide enough to fit the blade. I got them sharpened but it took some finesse.

I've owned this sharpener for about two months and I still love it. I finally used my hunting knives cleaning a whitetail deer and they worked flawlessly. They cut clean and did not loose their edge.
The non mechanical slot works great for touching up your knives through repeated use.
I recently saw this same sharpener in Bass Pro Shop for $50 plus shipping. Can't beat Amazon!!
I do have a correction: it is ASSEMBLED in the USA, not manufactured. Oh well, better than all in China.

My father was a butcher and I've still got several of his professional knives (he passed away more than 25 years ago). I've used a Chef's Choice sharpener for many years on these knives and they still have the same sharp edge my father obtained with his professional sharpening stone (which I find difficult to use). My old sharpener had an electric honing side, which I was never particularly fond of, so I was happy to find my new sharpener had a manual side for that. I am in a rather small apartment and needed to clear up some of my limited counter space. I have used a knife block for years and wanted/needed something smaller. This knife rack is perfect. All of the metal kitchen items that I use frequently fit onto this magnet rack including knives, a zester, scissors, and a small wisk. Although it comes with hooks that extend below the rack, I find that they are not useful and are covered by the items on the magnetic strip.It was super easy to install with the help of a level. Although it doesn't slam the knife against the rack with the force of the magnets, this rack will securely hold my largest knives. I picked this rack because reviews were astounding and the price per inch of knife rack was the second cheapest. I don't know what the review about flimsiness was talking about, as the rack is very rigid and, although it is plastic, looks good on the wall. After using it for about a month, I have no complaints. I bought this one because it is one of the longer ones. I think that it is perfect. It was easy to install. It also came with 6 little hooks that hang from the bottom which was a nice bonus. It was a bit heavier than expected, so I did have to use drywall anchors. I don't know what that review was talking about regarding the "bowing" because with its weight and rigidity I can't imagine how that would happen. And the magnets are plenty strong. Although they are exposed in the front, I think a thin strip of metal encasing it would be more attractive. But with all the knives on it, it still looks good. This pair of scissors was recommended to cut through copper at relatively thin gauges. I use it for up to 20 g and it works great. They are very sharp and do a fantastic job. I would highly recommend them. We live in the Pacific Northwest and bought these to help in cleaning Dungeness crabs. Instead of cracking the crab legs, we just cut them with these incredible scissors. They have a thin enough edge to get into even the smallest leg, yet are strong enough to not bend or break. Then I got a "set" that used 4 ceramic rods to sharpen the knives. They did a very good job, but it was a LOT of work.
After using that set for about 5 years, I tried a real "cheapy" electric sharpener and returned it after one use. It just did not sharpen. -Back to the rods.
I finally decided to give the 300W a try. It works just great. The knives get much sharper than any other method I have tried and they stay sharp much longer. For my purposes, this is an excellent sharpener.I don't normally write reviews, but this time I will as I think it might help others who have been searching for a decent and reasonably-priced sharpener. Four months ago I had about 14 utility and steak knives sharpened by an upscale store in Santa Monica. The price? $35.00. Now, I got the 300W for $34.88 all in. I sharpened the knives according to the instructions, and they came out sharper than the "professional" store job!

Granted, this isn't the most expensive thing in the world, but I was looking for better results more quickly than I could achieve with a manual sharpener. As the company's website claims you can have sharper than new edges, I decided to put that boast to the test with my set of brand new Henckels. Not only was the process tedious and quite demanding of technique, but I never got edges as good as factory (which were, admittedly, near razor sharp to begin with.)The magnetic guides work OK close to the bolster, but as the blade narrows and your hand is farther from the guide, it becomes very difficult to maintain alignment. On curved blades, you have to bring the handle up carefully during the stroke while unable to see the exact portion of the blade you are sharpening. It must be done by sound and not sight. Also, while inserting the blade into the sharpener, care must be taken for exact alignment or the diamonds will grab and kick out the blade somewhat. I never detected any damage, but it doesn't inspire confidence.
I imagine that while the more expensive models with wheel type sharpeners and a different style of guide might work much better, I'm just not going to pay $100 for a knife sharpener. I will stick with my manual diamond hone. I returned the 300W.

Unfortunately, I paid twice the www.Amazon.com price from a local store several years ago, and I must say it is one of the few kitchen appliances I have been disappointed with. It takes a long time to get all the knives honed to the angles of this sharpener. Then keeping them sharp seems to take a long time and they never seem to get as sharp as one would expect. The motor heats up quite easily after a few knives and begins to smell like it is overheating. I think the product has always been over-rated. Well, if you're reading this review after browsing to the Edlund #1 Commercial Can Opener (with base), then I'll assume you fall into one of three categories: you're involved in food service somewhere (e.g., restaurant, soup kitchen), you have a large family that uses a lot of institutional sized (10#) cans, or you are wondering if something like this might work for someone with arthritis. I find myself in the latter two categories.
This opener brought to an end our practice of buying and wearing out traditional, hand-held can openers. We're a big family and open a lot of institutional sized cans. I have no complaints. This opener can handle them all--even little tuna cans. Since we're not a restaurant, our biggest issue was deciding where to mount the base plate. We opted for a corner of one of our countertops in the area with the least foot traffic. Mounting the base plate required drilling holes through the countertop, then installing machine screws and nuts (provided). If we want the extra counter space (e.g., when hosting), the opener can be removed from the bracked and stored in a drawer or cabinet.
Turning the crank sure beats trying to turn those little handles on the hand-held openers we've used all these years. My wife has recently been diagnosed with osteoarthritis in her fingers (sadly so, because she is so young), so this is a real hand-saver for her.All around a pretty good opener. I found you must drop the blade down pretty hard for it to work properly but that is not really any big deal. It would not turn the can unless the blade is seated all the way down into a can. I would recommend this because I had several cheaper openers before this one and they were all a waste of money. This one seems well made and looks like it should last. I would buy it again, if I needed a second opener.

since I run a catering company on the side I open many cans and have never found a can opener that is this easy to use and durable. Opening 30 cans used to be a hassel not with this can opener. I've owned this stainless steel flatware for nearly ten years in several different colors. It looks today as new as the day I bought it. It washes beautifully, with a nice shine, and is practically indestructible. I bought the red to have a nice splash of holiday color against the white tablecloth. The white is especially elegant. This type of flatware is reminiscent of what we had when I was a kid. Actually, the knives are about perfect to me. The stainless steel is hard, so I've never had a problem cutting through anything. They got dull after two weeks. Can not believe that knives can go from extra sharp to dull in such short period of time. But they were cheap, so I bought what I paid for.Nice for the money but not especally sharp. I dont think Id buy it again but for something with a budget in mind they are a good deal..My wife wanted some more knives for the kitchen, so I found this set. She loves it. Its extremely sharp and show no signs of dulling. I might even buy another set because of how economical they are.
