
I am very pleased with the performance of this knife. If you are new to high-end kitchen cutlery, you are in for a pleasant surprise. If you have yet to experience VG-10 steel and it's 60-62 Rockwell hardness I can only describe it as like cutting with ice. If you look closely at the edge of this knife, you see that it is mirror-like, not coarsely ground. I have five of these in different sizes, and while I'm also a fan of Global and Shun, I don't have five of either of them. To me, this knife is the perfect combination of Japanese blade tech with the looks of high-end German cutlery.
