I will share with you my technique which works every time. Very simply, you must place your cake on a large flat surface to give you enough room to work the 15" cutter and use a gentle, slow sawing motion (back and forth)to cut the cake. Depending on the cake, it may take a moment or two to cut through the outer crust. Be patient. Once you cut through continue sawing gently through the cake. I have cut layers as thin as 1/4" the easiest Dobos torte I have ever made! I have used this cutter to slice butter cakes, genoise cakes and tortes made with either bread crumbs or finely ground nuts, such as walnut, almond and hazelnut. I have not used it on chiffon cakes, flourless cakes nor bundt cakes, so I offer no opinion there.
If this wonderful cutter is not working for you it is probably not the cutter but rather ineffective technique in its use: 1)not using a gentle, slow sawing motion; 2) pushing the wire through the cake rather than sawing; 3) rushing the cutting; or 4) not having a wide flat surface upon which to work.Cutting cakes into layers has always made me anxious. This handy tool takes out all the worry and gives you a professional looking result.
Just make sure you let the cake completely cool to firm it up. You might want to refrigerate a delicate one first just to firm it up more so the top layer doesn't break when you remove it.

I purchased the Kaiser One Wire Cake Cutter/Leveler in September 2008. I only bake cakes that require leveling a few times a year. It is a fun hobby that is becoming more than a hobby lately. I thought that this leveler would be much easier and get a cleaner cut than my handy work with a serrated knife. I was correct! This leveler started off working GREAT! I have used it on approximately ten cakes over the past year and a half since I purchased it. It works with ease and gets the job done perfectly and neatly.However, I just went to use this cake leveler again on two different cakes this past month and found that, on the first cake, the wire would not stay put. It kept slipping out of the little notches that allow you to choose the placement of the wire, to determine your heighth on the cut of the cake. I have only handwashed this item and it has been stored neatly in a cabinet with my other cake supplies, out of harm's way. I just thought maybe somehow it had become slightly bent. Then I went to get it to use it on the second cake of the month and the wire was broken apart from the little ring that holds it in place and allows you to adjust it. I was frustrated with the last failure of the cake leveler, so I was not wanting to deal with something even worse. I don't know of a way to repair it, other then to use a soldering iron or torc, neither of which I have! So in the trash it went!
And yet, here I am contemplating ordering a second one. Why, you ask? Because it actually was a great tool and I found it extremely helpful. It is only 12 bucks! You just can't beat that. Small price to pay for perfectly level cakes, even if I have to purchase one every couple years. I'm REALLY hoping this second one lasts MUCH longer! I would easily give this product 5 stars, had I not had the two BIG problems this last month. Therefore, I am only giving it 3 stars.

This product is indeed light weight but does a good job on cakes that are easy to cut in the first place. Starting the cut is the hardest part of the process, but then does a very good job. Do not think that it would do good with cakes that have nuts, rasins or other additives in cake mixture. Worked very well for me.
