This is a very nice slicing or carving knife. An Asian sashimi or yanagi knife has a single bevel edge either on the right or left side of the blade used for preparing sushi. When I saw the nice wooden box which contained the knife the label described the knife as having a Euro grind. After examining the knife it does have a european double bevel edge. The knife is extremely sharp and with a 50 rockwell hardness scale should be easy to sharpen and still be durable and not as fragile as blades with a hardness in the 60's. The blade has the appearance of Damascus steel, but doesn't say it's made from Damascus steel. The blade is VG-10, 67 layers which are forged together which make the blade the strongest you can buy without have a custom made knife.
