This is the first hollow edge knife I have ever owned. Wow what a difference! It makes razor sharp cuts with almost no effort. I have owned premium German knifes for over 20 years. I get them professionally sharpened every 4 to 6 months and I use my sharpening steel frequently, but they do not cut as effortlessly as this knife. The hollow edge design makes the knife seem sharper than anything I have used before.
