Great steel, the same as used in Wustof and Henkels premier quality knives, and much better steel than the consumer grade knives by either company.
The blade is well ballanced and the handle ergonomic, well suited to a choke grip that you should use on a paring knife.
The other person mentioned that the blade is too thick for their taste. This is a FORGED blade, WITH a bolster, not a cheap stamped knive. They may have a point that this can't be used for all paring jobs, but their expectations might not be calibrated correctly. This blade will work fine for 95% of paring jobs you'd run into in a professional kitchen or a gourmet home kitchen, but there may be a time when you should use a knife without a bolster, a stamped blade or a ceramic knife. It's an okay knife. But I like a thinner blade than this. Not as sharp as I thought it would be!
