Chefs Choice 130 Professional Sharp Station Knife SharpenerI have been using the Chef's Choice 130 for a couple of months now. My knives are very sharp and it didn't take long to get the hang of using this machine effectively.

I sharpened my 8" and 6" chef's knives first. They were *very* dull and required a new edge. I thought I'd practice using the machine on these knives as they are not an expensive duo to begin with (a couple of low-end Henckels knives) and if I ruined them, I wouldn't be too upset.

The learning curve was minimal. I took the time to read and understand the manual. It was clear and helpful and written by someone with proper command of the English language. I began to sharpen the knives indicated above and with minimal effort I was able to put a new, highly sharp edge on both knives. I was thrilled. It was the first time in YEARS that I actually had really sharp knives!

I sharpened a Fiskar carving knife and a couple of serrated bread knives. All three turned out perfectly sharp.

As for the quality of the edge, I am not an "edge snob". To each, his own, I guess, but the edges on these knives are nearly razor sharp, and by using the non-motorized steeling slot, I am able to keep them sharp with daily use. I cook for my family. Two teenage boys, my lovely wife, and various others in our circle. My knives get used for prep at least twice a day.

Don't let the cost scare you. When I total up the cost of all the other sharpeners I've wasted money on that couldn't put a decent edge on anything, I would bet I've spent the money this machine costs, and then some. It will be the LAST sharpener I EVER buy, without a doubt. It's built to last a lifetime.

This machine met my expectations completely, and I am looking forward to a lifetime of sharp knives in my kitchen. I couldn't be happier, and I highly recommend this sharpener to my fellow home cooks.

I like the three stages better than the two stage. The warning about not abusing good blades with stage one really only applies to harder steels as the diamond will create micro-cracks on the edge witch you will not be able to see, but will cause your blade to dull more quickly and need resharpening. When edge checking the blade after sharpening it does not actually feel as sharp as one can get with a stone and or free sharpning steel, but when I went to work on veggies, fruit, meat, fish, whatever, the blade performed well!! Like many people, I have a drawer full of knives, but only a few are of a high quality, however, the sharpener worked well on all of them. For the money, I feel as though I made a good purchase. BTW, had an NICE older hunting knife that had some blade damage from an accidental drop, I worked gently and slowly, and when done you couldn't tell where the damage (bend and chip) were and it looked like new with no appreciable work marks on the rest of the blade.

This knife sharpener works great and is fast. Works extremely well on knives that are normally too hard to sharpen will put a razor edge on Buck knives, small Swiss army knives, even those high dollar stainless steel kitchen knives that are almost impossible to sharpen once they lose their original edge. Does a great job on all of my pocket knives. I highly recommend this product.

My wife and I love to cook and dull knives have been annoying. I read up on the web and determined that for us the Chefs Choice 130 was what I was looking for. The purpose of a kitchen knife is to slice food easily not to perform surgery so incisions will heal well. So you don't need a scalpel edge as some knife nerds seem to think.
