I bought this knife because we have Henckels knives already and I wanted something that matched our set. I had bought some salmon, not sure of what I was going to do with it and when I saw salmon cakes, I knew I wanted to try them. However, the salmon I bought had the skin still on. I found this knife quick and easy and ordered it with Amazon Prime. The knife came quickly and was exactly what I needed. I had no problem removing the salmon skin and the salmon cakes were very tasty. I am looking forward to using this knife on chicken in the future.

I have never owned a boning knife, and I have always used a chef knife in its place. This item proves the utility of its class of knife for me. Bought it and broke a chicken down for the first time in the days after I had it with no problems. It is at least a bit flexible, very thin bladed, as you would expect, feels good, and useful in my hand. Henckels makes quality products and I have no regrets from this purchase.
