There's nothing the least bit fancy about the Update International KP-xx series of commercial kitchen knives, and they won't appeal to the pretentious, but they are a great value, constructed of the same X50CrMoV15 German steel as some high end knives costing many times as much and they are wickedly sharp right out of the package.
The KP-09 is a large chef's (cook's) knife with a 10 inch blade, stamped, not forged, much the same as the Victorinox 10" Chef's Knife, Black Fibrox Handle (except the Update International has a lightly textured white polypropylene rather than a Fibrox handle.)
I can't tell just how well pleased I am with this knife. For slicing and chopping jobs it just works. The handle is comfortable. The weight is substantial enough that the knife feels good in the hand, but still light enough for all day use.
If you're looking for an excellent knife made of excellent steel that is wicked sharp right out of the package, and the lack of snob appeal isn't an issue for you, give serious consideration to this series of stamped steel knives from Update International. Model numbers are KP-01 (for the small paring knife) through KP-10 (for the 10-inch cimeter butcher's knife.) They compare very favorably to the stamped Victorinox series of knives but at a fraction of the price. Really very happy with my purchase.
