The UX10is the top of the line for Misono, one of the very old knife manufacturers in Japan. This petty knife serves much of the same function as a paring knife but it is bigger and longer, making it more versatile. It is light and nimble and has a fairly thin handle. The craftsmen at Misono have taken their old school craftsmanship and combined it with state of the art materials to make an unbelievable knife. The steel comes from Sandvik in Sweden. It is quite hard and takes and keeps a very sharp edge for a long time. It isn't hard to sharpen. The edge is thin so you should take care not to push it past its limit by prying, using it on bones or frozen foods or otherwise abusing it. Wash it by hand and sharpen it occasionally. As a slicer and chopper it has no equal and it is really pleasant to use. It is stainless and will not discolor. I have owned the knife for about 10 years and use it more than any of my other knives. It isn't a cheap knife but is a great value because, give the proper care, it will last for decades.
