I love the Kershaw 6" Chef Knife. I prefer working with a 6" chef knife over a larger one in doing cooking preparation tasks. I'm more agile in using the smaller knife. The number one requirement of a chef knife, as, for that matter, any knife, is that it be sharp, and the Kershaw 6" Chef Knife is sharp as the dickens. Of all the chef knives I own, many, the Kershaw 6" Chef Knife is the one that requires the least sharpening effort to keep really sharp. The only misgiving I have about the knife is that it's light. I'm used to the feel of a heavier knife in doing my cooking preparation tasks, and I'm somewhat unsettled by the light feel of the Kershaw 6" Chef Knife. But that's something with time I'll get over. When I have a cooking preparation task, the first knife I habitually grab from the knife drawer is a Kershaw 6" Chef Knife. What impressed me the most is the great customer service. I had some issues with the USPS and they went out of their way to help resolve the issue.
My wife and I both cook and have to say this knife is the one we use most of the time. It's light and we love the handle. My dad had Kershaw pocket knives and he loved them. Common sense said to give their kitchen knives a try. I'm glad we did.I just bought my third Kershaw. Love this knife. It's good for carving, chopping and mincing. Will probably buy another one before the year is out.
