These are very thin, and as they say, flexible knives meant more for creating garnishes and for fine detailing when the point of a regular paring knife isn't delicate enough. I use them often for creating bento style lunches for my daughter. I wouldn't use them for slicing, but when I need to lift a star shaped slice off a radish they're perfect!
This set of knives was purchased by a family member. These are the absolute worst knives I've ever owned. They are not balanced, the handle is too light/too short and I would say dangerous. It is so out of balance you can not safely peel an apple without concern of personal injury. I would never even consider purchasing another product from this company. To give something a bad review isn't my S/O/P. but this one takes the cake! One star isn't low enough~ more like -5. Stick with Cold Steel products.
