I was looking for the most reasonably priced, high-end steak knives out there and I believe I may have found them! They are extremely sharp and have a great weight and feel to them. They will be in our family for a very long time.Caveat since they are a very classic knives, they have beautiful wooden handles (which feel great!) that cannot go in the dishwasher. If that is not appealing to you, they may not be the knives for you.

A little corny? Sure, but this poem is what is written on the 1950's era packaging this comes in...just a simple cardboard box (no clamshell packaging), everything is written in English and is MADE IN USA! There is a drawing of the other Kwik-Kut on the box that has the plain edge which would seem the better option for cutting out biscuits or cookies.
I NEVER remember a time where Mom did not have this chopper in the kitchen and as a young boy, I HATED IT. The reason?---One of my chores was that when Mom was making slaw, I was responsible for getting the cabbage chopped for seven people, not counting if we had company. Back then, I was the food processor and this was "The Slaw Thing". Thinking back, I should've loved it because even though I didn't have a lot of strength in my young arms, this tool did most of the work for me. Mom's slaw always came out tasting great and I like to think part of that was my excellent chopping skills with her Kwik-Kut. It always felt like a good accomplishment afterwards and although I might've have had some cabbage in my hair and a jelly-arm, helping Mom in the kitchen was still better than pulling weeds out in the hot sun.
Fast-forward to a few decades later and I have finally bought my own Kwik-Kut. I like making slaw my way instead of store-bought and this is PERFECT for that. I'm happy to say that I haven't lost my touch. It will quickly chop up the cabbage and I don't have to bother with cleaning the food processor which is messier than a 10 yr old with a bowl full of cabbage. Whether doing a little or a lot, this gets the job done and I'm still able to get the cabbage to the perfect consistency for slaw that I always have to eat when I have fried fish and hush-puppies, hot-dogs or a pork barbecue sandwich.
It is VERY SHARP which is the way a good chopping tool should be because THE TOOL DOES MOST OF THE WORK. The serrated edge on my Mom's Kwik-Kut is still very sharp after decades and I foresee mine lasting just as long. You'll never have to worry about buying another unless of course it gets lost or "borrowed". There's nothing to rust and free of any plastic or wooden parts. Like the packaging states it's "The Ideal Food Chopper. Easy to use and clean--Light to handleKwik-Kut."
Mom found a lot of uses for this food chopper and you'll likely find just as many. It might sound strange, but for me, the best thing this made was some great memories.My mother has had one of these choppers for probably 30+ years and still uses it. I have had a Pampered Chef chopper and used it for the past nine or ten years; however, I don't like to use it often because of the hassle in cleaning it, particularly if I only have a very small portion to chop. Therefore, I purchased this simple chopper for the smaller jobs (i.e. chopping hard boiled eggs for egg salad or a handful of pecans to top a serving of ice cream). It is fabulous and much easier to clean than the aforementioned P. Chef chopper. Plus, it is made in the USA, which is something we try to shop for as much as possible.

Just loved this chopper. We used it all the time. Worked great on Deviled Egg yolks. Just don't take it out of your house, because you will lose it, then you won't have it. That is what happened to us. We took it to Christmas 2 years ago and left it there and never saw it again.We will be ordering more than one. Just love it. Warning, it is very sharp, but man does it work.

Cutting lettuce crushes cells adjacent to the cut, bruising them, so the edges turn brown. This can be minimized by slicing lettuce with a plastic serrated knife or by tearing it. This knife does not slow oxidation, it merely does less damage than a metal knife, so it takes longer for the edges to become obviously brown.I use it mostly to cut foods that are too soft to cut cleanly with a metal knife: brownies, cakes, meat loaf. For these applications, it does an excellent job. Use a gently sawing motion. Brownies come out square like bricks, not smashed at the edges and cracked across the top. It cuts cake or pie cleanly without crushing it. And meat loaf slices come out neater that with a metal knife. All with fewer crumbs to clean up.
The knife is well made from clear plastic that is frosted, like a shower door. Its handle is comfortable and doesn't become slippery. Cutting edge is 7.25 inches long. Blade maximum height about 2.5 inches. Dishwasher safe, but very easy to wash by hand; made in China.This knife does a fine job for what it is, but I wish that it was a couple inches longer so that it could slice through a head of iceberg lettuce in one stroke. Ok I didn't buy this to cut lettuce. I bought it because the blade is safe for non-stick surfaces. I bake brownies in a non-stick pan and am forever getting frustrated trying to get them out without marring the surface of the pan.That's the sole purpose for this knife for me. My non-stick cooking pans are metal utensil safe and I buy lettuce already cut up.
The balance on this is great and the handle is a terrific shape i have arthritis so handle shapes are an issue and this is easy to hold but Good Grips usually are.
Been thru the dishwasher several times and it looks new. I was worried about the plastic blade breaking but so far so good!

So, I bought this for our commercial kitchen since we now offer salads. I was very excited to get this in. I told everyone how our salads were going to last longer because of the plastic knife.Well, that's all crap. I did a test where I cut up part of a lettuce head with a metal knife and this plastic knife. Guess what...the both turned brown at the same rate, 2-3 days. What a joke. Don't bother with this, it is all hype.I bought this to use as a cake knife on my crystal cake stand. It works great and doesn't look too bad. We made it through the holidays just fine. Remember the metal scratch up your cake plates. They look nice and may match your lovely silverware pattern, but metal cake servers, etc.. are a hazard to good crystal.

I shuck 300 to 800 oysters a week. This knife does the trick. The New Haven tip cracks open the hinge and goes right into the muscle. Quick turn and the bottom muscle is cut. Role over the oyster and ready to serve. I do have to do a quick sharpening every other week. The handle is tought, sanitary and does not dig into the palm of your hand after shucking several hundred oysters.Overall I really like this knife. Just did a 100ct of James River Oysters (which I think are Med to Large) today for a party and found it much better than my previous knife. Someone recommended the curved tip "New Haven" style who had shucked at an oyster bar and it really worked well for these oysters. Granted, it think these are easier than others I have done in the past. Benefits of this knife include-non-slip handle, good handle size for my Med size hands, VERY solid stiff blade, curved tip that was thin enough to wiggle into the joint. Nice curve also helped cut the abductor easily. Broad enough turn the meat after cutting. I work at an seafood place/oyster bar that primarily serves oysters on the half shell and this blade has proven perfect for getting in the hinge quickly and cleanly. This is almost great beginner knife, the only thing that stops it from being all around perfect is also its biggest strength: the hooked tip. The hooked tip is awesome for serving on the half shell for most oysters, but isn't quite as versatile as Boston or Galvenston style knifes for getting into the really big oysters, clams, etc. If it's your first knife or your only knife I recommend the Boston style of the same brand, but that doesn't stop me from loving this knife!And this time I didn't kill myself with this Victorinox oyster knife. I just can't describe in words how shocked I was when I shucked my first oyster using this proper tool. My buddy and I shucked 100 blue point oysters that day with minimal effort. We have the Sasaki (/ Mikasa) Double Helix pattern and needed more spoons. Apparently Double Helix is out of production or has limited availability, so I ordered these as they look similar (and they were selling for less than their current price -about eighty-to-eighty-five bucks when I got them).They're okay for our purposes, but they are significantly lower quality than the Double Helix pattern. For one thing, they are flatter and feel like stamped metal rather than forged. For another, the brand and pattern are printed (!) on the back of the business end of each utensil, rather than engraved in the back of the handle (yes, I thought it was a sticker and tried to peel it off, but apparently that's not the case).
The design is reasonably good, although the forks are a bit pedestrian (one thing I really like about the Double Helix patter is the three-tine fork, rather than the standard four-tine).
All-in-all, it was a relatively inexpensive way to pick up 16 extra spoons for all the tea making and cat feeding that goes on around the house (and it's a great price for a full set of eight place settings), but it wouldn't be my choice for day-to-day flatware.

I purchases a set of Mac knives about 1975 and we used them so much we wore them out. Ever since, I have been searching for them to replace them without luck until I found them on Amazon. This paring knife is the best I have ever used. We love it.This is my favorite knife of all. I use this food scraper as both a scraper when I want to add chopped vegetables to a recipe, but also as a small cutting board. Works great and washes well in dishwasher.The blade is to thick to work properly. Like my stainless steel one better.The cutting boards are great. Jean Dubost Laguiole 6-Piece Steak Knives -Olivewood
These knives are most definitely authentic and are simply stunning. There are certainly imposters out there, but these are the real deal and worth every penny.I purchased my Jean Dubost Olive Wood handle steak knife set elsewhere, but I'm writing this review to warn others away from this overpriced, low quality representation of a true Laguiole product and brand. I would not buy any Jean Dubost product as they have cut corners everywhere making this an inferior product;These knives are NOT forged, but instead are cheap stamped stainless steel of claimed 18/8 quality but are thin and the blades flex easily.
The olive wood used is of lower grade younger sources as it does not exhibit the kind of grain character and quality typically associated with better source olive wood.
Though this has a full tang, the construction is simple and does not follow the more authentic practice of a more substantial forged hand-chiseled spring.
The blade edges are not honed and exhibit spurs and chips in the set I purchased
The finish while highly polished does not appear as it will hold up well and my set was leaving black greasy like marks on the drying towel after cleaning by hand.
I have no proof that these knives were not made in France as the "certified" label states, but the construction quality suggests otherwise.
Fair warning you will find Wine Enthusiast and Willams-Sonoma selling this product as well. You would think they should know better. If this set of knives was priced at $99 or less and you only wanted the look of a real Laguiole product and were OK with the mediocre quality I'd say go for it. But at this price point these Jean Dubost knives are a rip off.
If you want more background on true quality Laguiole knives the Laguiole Imports website can be very helpful. They have a guidelines page that I wish I found before purchasing this horrible product.

I have long been a fan of French made Laguiole steak knives. WE have a few sets, but I know there is a HUGE difference in the quality of the authentic French version vs. the Chinese version. Even Jean Dubost has a cheaper version that I have seen in places like Homegoods and Marshall's. It is easy to tell the difference in personyou simply need to pick up the knives to check for weight and balance.I was very pleased with this set. It arrived with a shrink wrapped cover that had the made in Theirs stickersince I ordered online, I had to open and check out the product to make sure it was as advertised. They are lovely. I purchased as a wedding gift for a dear friend and I know they will enjoy them as I do. The olive wood is beautiful and I am sure will be even more attractive with age. The are very stylishrustic yet modern.
This is an excellent price for the quality. I compared many retailers with the same item. I highly recommend this set.

These are beautiful knives. They are made in France by the top producer of authentic French Laguiole cutlery. They have a good weight and balance. The blade is beautifully forged in a nice heavy (but not to heavy) weight and is etched with decorative scroll on the exposed edge in the handle. The handles are rich-looking and beautifully finished in olive wood, which is relatively light in color with a nice grain and will probably darken with use. Dubost has other styles of handles in this otherwise same knife listed as "mineral', "pearlized ivory" and various colors that are nice but plastic, and in stainless, but these are the most elegant looking. There are many less expensive "Laguiole" style knives available (and Dubost also make a cheaper under $100 for a set of 6 line of knives in China under their brand but with thinner stamped instead of forged steel blades). Friedr Dick Premier Competition Chef Knife 9 Inch Blade
A decade or so ago I purchased a whole flock of F. Dick knives as I went into culinary school. Without a doubt that was probably one of the best investments I EVER made! Hands down. F. Dick markets to culinary students & schools for two very good reasons: 1) They then don't need to spend a fortune in advertising, trying to get housewives & wannabees to buy their knives...just to show off the new toy to their friends & neighbours. (Or brag about how much they spent.) 2) They're darn near bullet-proof...and thus perfect for students, working chefs or home users that aren't going to sharpen their knives every couple months.I purchased my "regular" 9" before I had seen the Competition Knife...and being a student had to go without.
Well, seeing as I've have NOTHING but high praise for their knives I decided to finally get the competition knife. Have I used it in a competition..? No... But, along with being another OUTSTANDING F. Dick knife it really is a very cool conversation piece. My wife & I have a lot of "foody" friends and this still is the most popular piece of equipment that we have in out kitchen...and we have a LOT O' TOYS in our well stocked kitchen. It seems that everybody want to test their skills with it. ROFL (And it's still less than some of the advertised brands...)
Oh, and for the record... Nobody, and I mean NOBODY makes a steel as good as F. Dick. Go ahead, do a search or better yet ask somebody that knows what they're talking about. They're worth their weight in gold!
