Zwilling J.A. Henckels Twin Select Mincing Knife

Zwilling J.A. Henckels Twin Select Mincing KnifeThere isn't much to say about this knife. It is sharp, sharp-looking and comfortable to use. I bought it as a stocking stuffer for my husband a year ago, thinking it was overkill, since a knife would do the job. But this mincer slices more cleanly and does it in less time than a knife. We use it often. It will never end up in the utensil graveyard.

I first found this item at a gourmet food and grocery store in Evanston, IL. They used this to make all of their chopped salads. It works perfectly to chop your vegetables, legumes, meats, fruits, etc to virtually as fine or as chunky as you would like. It is quick, easy to use and I love it!!

It can be a bit of a learning curve to figure out how to use properly... I know... I know... it looks like a piece of cake... twas what I thought as well... The blades are ultra sharp and if you have a diamond steel, and know how to use it, they will stay that way.

The only complaint I could have about them is that I like to protect my knives with blade guards... Well these little bad boys are a little hard to find one that fits them and protects the blade from nicking and dulling. I ended having to take it actually to the local knife place and just try out guards until we found one that wasn't too horrible.

Not much I can really say, as it was given as a gift, and I haven't used it personally. The recipient claims it is a fantastic tool, and is very sharp, and big enough for big hands. His only gripe was that the blades tend to get fresh herbs stuck between them, and cleaning them off (sticking a finger between them) is a scary job considering how sharp it is, and not something that should be attempted after a couple of glasses of wine. :-)

I bought this product for chopping herbs. Knife is incredibly sharp. But while it cuts well, moist leafy herbs get caught between the blades. And because of its sharpness, you have to be careful dislodging them back on your board for another chop. You also have to be careful how you store it, as it doesn't fit a knife block or similar storage solution. It works fine for "dry" herbs like Thyme or Rosemary, but it won't work very well on Cilantro or flat leaf Parsley. Overall, a regular single blade knife actually works better.
