the product was brilliant and quite competent. edging was true. i re-ground them to a right-handed edge different from traditional Japanese tools but that is the best way that i cut. the only downside was that the shipping expense was as expensive as the knife set itself. i recommend the knives without question. a real value for the weekend Sushi Chef.
