Best knives I've ever used, and I was a professional cook/saucier for almost fifteen years. I've used almost every make Forschner, Dick, Shun, and three different Henckels series, and the Profection knives are the best designed and very well made.Weight, balance, finish, are all exactly right for my hand; the new bolster shape makes sharpening the full length easy, and the thick back provides better stability over long use.
