There are some chef's that use expensive brands and styles, but this is a real workhorse.
Why?
They stay relatively sharp, compared to how much they are used. I use it to break down lamb legs, about 5 per day.
They are economical.
Comfortable [this is the most overlooked quality].
You do not need expensive Japanese or German knives to do the job. They have there place, don't get me wrong.

Victorinox knives are very proven, don't be fooled by the cheap looks, they are only made to do one job, work.
