Don't know how it works, but this knife produces perfect, uniform tomato slices with very little pressure and no tearing of the peeling. The slices are the same width at top and bottom, and the knife can also be used for slicing other soft/semi-soft fruits and veggies. After reading the reviews I decided to give this knife a try. Works really good for slicing tomatoes. You can also lifT a tomato slice with the end of the knife and slide it off onto your plate or bread. It's also excellent for spreading the mayonnaise on the bread when making BLTs or even just a tomato sandwich. I'm purchasing another for a Christmas Gift.
