The knife has an oustanding blade, the 80/20 angle is sharp right out of the box.my poblem was the handle, mine wasn't set or cut perfectly.the metal was taller than the wood in some places creating an entrance for bacteria and it just didn't sit perfectly in my hand due to uneven build.Unless you are a picky chef this wouldn't be an issue.
