My first sashimi knife. Maybe there are better ones out there, but I haven't tried any others yet.
It's sharp enough to do its job. It's cheap enough for me to afford. So no complaints.Cooking every night, I use the heck out of my knives but I take really good care of them too. I prefer Japanese knives and I'm stunned at the performance of this knife and another from the same brand. The handles do not appear to be good quality but I must say that the look is deceiving because they are holding up well. The blades are amazing and it is a joy to use them on meats, fish, and veg. If you take care of your knives, are skilled at using them, and love to have quality tools in the kitchen, I recommend these knives over Shun and the other expensive brands any day. I purchased these knives to use as "junk knives" in case I needed to cut some foods that I thought may damage my expensive knives. I think I paid about $17 for this one and it's every bit as good as my Shun.
